Hey everyone, here’s a note on our plans for the new year:
As to not bury the lede, we have made the decision to be closed for the month of January to reassess and reevaluate the viability of our concept going forward. Despite how hard we have tried to persist, as amazing as our staff is (and has been from day one), and with as much support that we’ve had from all of you, this decision still had to be made. We know this affects a lot of people, but, if we are to try to survive, it had to be done.
As you all know, everything has changed. Unfortunately, the restaurant business has changed more than most. Labor and food costs have almost doubled. Labor is as hard to find as it has ever has been, while food quality and availability are in just as bad a place now than during the height of the pandemic. The cost of liquor, beer, wine and all of the other disposable goods that go into running a restaurant are much higher now, too. These aren’t excuses, they are facts. What it means, though, is that while our sales are significantly higher (both year over year, and month over month), the margins have basically disappeared. For a small, family owned restaurant, the low margin model with which we began (focusing on local, fresh and high quality ingredients and more), pre-pandemic, is now not sustainable.
That said, this isn’t a goodbye.
We plan to be available for catering, private events/dinners and maybe even a few “secret supers” (iykyk) throughout the month. Who knows what the future holds, but stay safe and warm, and we’ll see you soon. Keep an eye on our social media pages for updates as we move forward.
As always, thank you all for the patience and support over the last three years. We wouldn’t have made it this far without all of you.
With love,
Matthew Salopek and the Salopek Family
