ures in east London, has created a rare bar space with its unique design and is one of the top Design Hotels™ members in the similar East District of Taipei. In addition to the classic bartending that Bartender is good at, we have also cooperated with Mr. Yao Hecheng（Kingfisher）, who is known as the "Master of Whiskey" in Taiwan, to carefully selected hundreds of whiskeys and spirits from various countries/regions around the world, with various flavors, rare and limited quantities, waiting for you to find surprises and then match it with the bar food designed by the chef team of L'IDIOT RESTAURANT, adding rich colors to the night in the East District.

從製作到食用的過程中，
以永續發展的角度審視，
剝下的粽葉、花生殼、栗子殼，鹹蛋白、香菇水，
並非僅是剩餘物，而是能夠轉化再生的風味：

借用午時水的吉祥寓意，呼應Hennessy的每日關鍵時刻，我將作品命名為「十一時（11:00）」，以此向臺灣端午的飲食文化，以及Hennessy追求卓越的精神致敬。

《Confluence》匯流之境

Rémy Martin 三百年，只專注一件事 —
讓時間與風土，達到平衡。

來自 Grande Champagne 與 Petite Champagne 土壤與葡萄，互相連結，帶來優雅細緻的花果香。我將「時間與風土的對話」伸到台灣的土地。

屏東可可的堅果與可可香;
自製大湖草莓果醋的明亮莓果酸;
香蕉利口酒的熟成風味；
Manzanilla 的礦物與鹹鮮;

日曬 Sidamo 與水洗 Yirgacheffe 以冰滴方式呈現，在用優格去澄清，輕盈的花果香與明亮果酸、細緻的堅果調，以及莫雷巧克苦精的香料層次 — 共同呼應 Rémy Martin V.S.O.P 的花香、杏桃、香草與橡木風味。

透過發酵、氧化與熟成，讓風味在時間中交會、融合。
