☕️ Moonshine 沖煮實驗室：從世界賽到你的餐桌

Moonshine 每年不斷更新沖煮概念，我們相信比賽中的技術突破，最終都要落實在店內的每一杯咖啡中。這 7 年來，我們換了 5 套沖煮系統，未來將陸續與大家分享這些進化過程。今天先簡單描述一下目前使用的系統。

｜關於 TRIO V2 濾杯｜
目前店內使用的 TRIO V2，是 2023 年Zenki參加世界手沖大賽（WBrC）時，種下與 TRIO 團隊共同研發的契機，經歷了2年的研發終於於去年面世。

我們設計的初衷很單純：將複雜的比賽概念，轉化為消費者在家也能輕鬆複製的美味。

｜比賽級「三段式浸泡法」 3-Part Method｜
想要在家享受沖煮樂趣，請掌握以下參數建議：
• 粉量： 14g
• 粉水比： 1:15 - 1:16
• 水溫：前兩段 95°C (高溫) / 第三段 70°C (低溫)
• 水質：建議硬度 50-70ppm
• 磨豆機參考： EG1
• 研磨度：700-800um (家裡不用這麼精準，建議從比平時習慣的研磨度「細一格」開始嘗試）
• 濾紙選擇：快速濾紙（Hiflux 185 / 不織布梯形 / SIBARIST FAST FLAT2）
• 替代方案：若使用一般流速的濾紙就不用磨細一格

• Tips: 需搭配 2-4 人份大尺寸濾紙，並使用壓紙器將濾紙塑形貼合。

｜沖煮階段與時間參考｜
1. 第一段（高溫）：注入 40g (1:3-3.5)
• 於 00:25-00:40 之間濾出約 5-10 秒。
2. 第二段（高溫）：注入至 90g (1:6.5-8.0)
• 於 01:00-01:10 之間濾出約 5-10 秒。
3. 第三段（低溫）：補水至 220g (1:15-16)
• 於 01:35-01:40 之間濾出直到結束，約20-30秒。

｜實作小筆記｜
• 注水手法：始終由中心向外均勻畫圓。
• 流速觀察：若濾出過慢（塞水），下次請調粗研磨；若過快滴完，則調細研磨。
• 豆性調整：不同處理法起始研磨不同。例如：水洗豆通常比日曬豆需要稍粗的研磨度。
