THE FIRST MEAL|
The First Meal
The First Meal
到一項循環經濟中的商品;
THE FIRST MEAL
Sustainability matters most when it can scale. To me, the Flor de Caña Sustainable Cocktail Challenge turns sustainable thinking into action.
It must go beyond waste reduction: cost, sourcing, reproducibility, commercialization and scale all matter.
The First Meal begins with a Taiwanese Breakfast Culture: soy milk and sesame flatbread.
Built on the Mai Tai, a lower-sugar Roasted Okara Orgeat replaces almond orgeat. Its grain-like nuttiness lifts the vanilla and toasted-nut notes of Flor de Caña 12 Years, giving the classic a distinctly Taiwanese expression.
Because sustainability should never come at the expense of flavor.
Okara—the pulp left from making soy milk—is often overlooked. Here, it connects environmental sustainability with Taiwanese food culture.
Instead of processing fresh okara from scratch, I use commercially produced, non-GMO okara powder for consistent quality and clear labeling. Because circularity needs demand.
When producers turn by-products into accessible ingredients, bars put them on menus, and guests choose them, sustainability becomes a viable business model:
By-product → Product → Menu → Consumer Demand
As adoption grows, demand and supply chains can create economies of scale and systemic impact.
At Rumway, SDG 12 — Responsible Consumption and Production guides our use of local, lower-carbon and responsible ingredients.
Roasted, steeped and filtered twice, the okara becomes a lower-sugar orgeat with Fair Trade organic sugar and a touch of Flor de Caña 12 Years. The spent okara then becomes a crisp and powder garnish. Toasted with sesame, it recalls Taiwanese sesame flatbread and closes the cultural loop.
Soy by-product → Commercial ingredient → Orgeat → Crisp & Powder → Cocktail Experience
Impactful sustainability should make better choices easier to adopt, desirable, commercially viable and culturally meaningful.
This is The First Meal.
Born from Taiwanese culture.
Built on circular thinking.
Designed to scale.
