며칠 전, 한 손님이 Old Pulteney 21년 병을 보며 물었습니다.
“왜 병목 모양이 이렇게 독특한가요?”

Pulteney의 증류기는 큰 boil ball과 독특한 평평한 상단을 가지고 있으며, 이 실루엣은 병 디자인에도 반영됐습니다.

고숙성 원액 부족으로 21년은 2017년 라인업에서 제외됐고, 2018년 코어 레인지 개편 이후 단종됐습니다.

증류소가 있는 Wick은 한때 청어 어항으로 번성했고, 약 25년간 주류 판매가 금지된 시기도 있었습니다.

이 병은 2015년에 병입됐습니다. 가장 어린 원액도 늦어도 1994년에는 숙성을 시작했으며, Inver House가 1995년 인수하기 전입니다. 올해는 증류소 200주년이기도 합니다.

골든 레이즌, 살구, 자두, 사과에 버터, 몰트, 꽃꿀과 바닐라가 이어지고, 은은한 짠맛과 감귤, 견과류, 생강, 미네랄감 뒤로 오크 탄닌, 옅은 스모크, 담배와 향신료가 남습니다.

A guest recently asked why the neck of the Old Pulteney 21 bottle has such an unusual shape.

Pulteney’s wash still has a large boil ball and a distinctive flat top, echoed in the bottle design.

The 21 Year Old left the range in 2017 due to a shortage of aged stock and was discontinued after the 2018 core range overhaul.

Pulteney is in Wick, a northern Scottish port once famous for herring, where alcohol sales were prohibited for about 25 years.

Bottled in 2015, even its youngest wh**ky had begun maturation no later than 1994—before Inver House acquired Pulteney in 1995. The distillery also turns 200 this year.

Golden raisin, apricot, plum and apple lead into butter, malt, floral honey and vanilla. Gentle salinity, citrus, nuts, ginger and minerality give way to oak tannin, light smoke, to***co and spice.

「なぜ首の形がこんなに特徴的なの？」と聞かれました。

Pulteneyの蒸留器には大きな boil ball と独特の平らなトップがあり、そのシルエットがボトルにも反映されています。

高熟成原酒の不足により21年は2017年にラインナップから外れ、2018年のコアレンジ刷新後に終売となりました。

蒸留所があるWickは、かつてニシン漁で栄え、約25年間にわたり酒類販売が禁止された時代もあった港町。

このボトルは2015年瓶詰め。最も若い原酒でも遅くとも1994年には熟成を始めており、1995年のInver House買収以前の原酒です。今年は蒸留所創業200周年でもあります。

ゴールデンレーズン、アプリコット、プラム、リンゴに、バター、モルト、花の蜜、バニラ。ほのかな塩味、柑橘、ナッツ、ジンジャー、ミネラル感から、オークタンニン、淡いスモーク、タバコ、スパイスへ。

내일은 중추절입니다. 오늘의 SMWS 79.8은 대만 지부가 2023년 중추절을 위해 선보인 한정 보틀입니다.

SMWS는 각 캐스크의 풍미에서 이름을 붙입니다. 이 병은 “Herbal Digestive”. 이름만 보고 어느 증류소인지 맞힐 수 있을까요?

힌트 하나. 이곳은 원래 면직 공장이었고 River Teith의 수력으로 움직였습니다. 지름 약 11.1m의 Hercules 수차도 있었죠.

정답은 Deanston. 1980년대 가동 중단 후 1990년 Burn Stewart가 인수해 재가동했고, 오늘날의 부드럽고 꿀처럼 달콤하며 왁시한 스타일로 이어졌습니다.

잔에서는 레몬그라스, 청사과, 시트러스, 자두와 꿀이 먼저 나오고 뒤로 미네랄·나무·후추가 이어집니다. 입안에서는 허브와 몰트가 더 선명하며, 피니시는 마른 풀, 생강, 가벼운 과일과 우디함.

달콤한 중추절 라벨과 달리, 잔 속은 드라이하고 허브가 선명합니다. 월병을 즐긴 뒤, Nova에서 이 토끼와 함께 입맛의 리듬을 바꿔보세요.

Tomorrow is the Mid-Autumn Festival. SMWS 79.8 was released by the Taiwan branch as a 2023 festival limited edition.

SMWS names each cask after its flavour. This one is “Herbal Digestive”. Can you guess the distillery?

A clue: it was once a cotton mill powered by the River Teith, with the Hercules waterwheel measuring about 11.1 metres across.

The answer is Deanston. After closing in the 1980s, it was revived by Burn Stewart in 1990 and developed the smooth, honeyed and waxy style known today.

In the glass: lemongrass, green apple, citrus, plum and honey, followed by mineral notes, oak and pepper. The palate is more herbal and malty, finishing with dried grass, ginger, light fruit and wood.

The label looks sweet and festive; the wh**ky is drier and more herbal. After the mooncakes, come to Nova and let this rabbit change the pace.

어떤 위스키는 라벨의 이름만으로도 궁금증을 불러옵니다.

Wemyss Malts가 병입한 이 Bunnahabhain의 이름은 “Kirsch Gâteau”. 자연스럽게 블랙 포레스트 케이크를 떠올리게 하죠.

당시 Wemyss의 싱글 캐스크는 테이스팅 패널이 직접 캐스크를 고르고 이름을 붙였습니다. 유명 위스키 작가 Charlie MacLean도 참여했습니다. 각 캐스크에서 가장 선명한 풍미를 찾아, 그 인상을 그대로 이름으로 남기는 방식이었습니다.

1988년에 증류되어 Sherry Butt에서 26년 숙성된 이 Bunnahabhain에서는 다크 초콜릿과 리큐르에 절인 체리의 인상이 두드러졌고, 그래서 “Kirsch Gâteau”라는 이름을 얻었습니다.

그러니 “내가 Bunnahabhain을 좋아하나?”보다
“나는 다크 초콜릿과 술에 절인 체리를 좋아하나?”를 먼저 물어봐도 좋습니다.

Some wh**ky names make you curious before the first sip.

This Bunnahabhain, bottled by Wemyss Malts, was named “Kirsch Gâteau” — naturally bringing Black Forest cake to mind.

At the time, Wemyss single casks were selected and named by a tasting panel, with wh**ky writer Charlie MacLean taking part. The idea was simple: find each cask’s most distinctive flavour and turn that impression into its name.

Distilled in 1988 and matured for 26 years in a Sherry Butt, this Bunnahabhain showed notes of dark chocolate and liqueur-soaked cherries, giving rise to “Kirsch Gâteau”.

So instead of asking, “Do I like Bunnahabhain?”
ask, “Do I like dark chocolate and boozy cherries?”

Berry Bros. & Rudd는 Springbank보다 130년 먼저 시작된 영국의 유서 깊은 와인·스피릿 상인입니다.

1698년, Widow Bourne이라 불린 여성이 런던 St James’s Street에 가게를 열었습니다. 처음에는 커피, 차, 향신료와 식료품을 팔았고, 이후 와인과 증류주가 중심이 되었습니다. 3 St James’s Street는 지금도 BBR의 주소로 남아 있습니다.

현존하는 가장 오래된 자체 라벨 스피릿 병입 기록은 1853년의 스카치위스키이며, 1923년에는 블렌디드 스카치 Cutty Sark도 탄생시켰습니다.

이 2018년 병입 라벨에는 H.M. The Queen과 H.R.H. The Prince of Wales의 두 Royal Warrant 문장이 보입니다. 오랫동안 영국 왕실에 와인과 스피릿을 공급해 온 역사의 흔적입니다.

300년이 넘는 시간이 흘러도 기준은 단순합니다.

Berry Bros. & Rudd predates Springbank by 130 years.

Founded in 1698 by a woman remembered as Widow Bourne, the shop began on London’s St James’s Street selling coffee, tea, spices and groceries. Over time, w**e and spirits became its focus, and 3 St James’s Street remains its home today.

Its earliest surviving own-label spirits bottling record dates to 1853 — a Scotch wh**ky. In 1923, Berry Bros. also created Cutty Sark.

This 2018 bottling carries the Royal Warrants of H.M. The Queen and H.R.H. The Prince of Wales, reflecting BBR’s long history of supplying w**e and spirits to the Royal Household.

After more than three centuries, one question remains:
“Is it good to drink?”

This 1991 Springbank is one of BBR’s answers. Try it by the glass at Nova.

패키지는 Gucci, Dior, Audemars Piguet와 협업한 대만 아티스트 Page Tsou(鄒駿昇)가 맡아, 고전 회화 《팔준도》를 새롭게 그려냈습니다.

여덟 마리의 말은 먼 여정과 추구를 떠올리게 합니다. Tamdhu의 셰리 캐스크도 스페인 헤레즈에서 시즈닝을 마친 뒤 스코틀랜드 스페이사이드까지 이동합니다. 오크 건조부터 캐스크 제작, 시즈닝, 증류소 도착까지 약 6년이 걸립니다. 이 기다림이 Tamdhu의 “100% 올로로소 셰리 캐스크 숙성” 철학을 완성합니다.

전량 Oloroso 셰리 캐스크 숙성, 53.8% ABV. 백건포도, 시트러스, 자두, 조려낸 과일의 단맛으로 시작해 건포도와 짭짤달콤한 절임 과일, 몰트, 견과류, 생강, 우드 스파이스로 이어집니다.

Only a few months remain in the Lunar Year of the Horse. This Tamdhu limited edition features artwork by Taiwanese artist Page Tsou (鄒駿昇), known for collaborations with Gucci, Dior and Audemars Piguet, reimagining the classic Eight Steeds.

The horses suggest distance and pursuit. Tamdhu’s sherry casks travel too: seasoned in Jerez, then sent to Speyside. From air-drying the oak to cask making, seasoning and delivery, preparation takes around six years. That patience defines Tamdhu’s 100% Oloroso sherry-cask maturation.

Bottled at 53.8% ABV, it opens with white raisins, citrus, plum and stewed fruit, followed by savoury-sweet preserved fruit, malt, nuts, ginger and spiced wood.

Eight horses may gallop a thousand miles, but Tamdhu never rushes its sherry casks. Come by Nova tonight.

오늘 소개할 독립 병입업체는 Signatory Vintage입니다.

1988년, 스코틀랜드 위스키 업계가 ‘Wh**ky Loch’라 불린 재고 과잉 시기를 지나던 때 Andrew Symington은 Signatory를 시작했습니다. 그는 같은 증류소의 원액도 어떤 캐스크에서 숙성되느냐에 따라 전혀 다른 개성을 보인다는 점에 매료되었습니다.

‘Signatory’라는 이름은 각 병입에 유명인의 서명을 넣으려던 아이디어에서 시작됐습니다. 하지만 첫 1968 Glenlivet은 서명할 사람을 찾기 전에 모두 판매됐습니다.

대신 남은 것은 또 다른 ‘서명’이었습니다. 증류일, 병입일, 캐스크 타입·번호, 도수, 병 번호까지 라벨에 남깁니다.

Andrew는 최근 “기억에 남지 않는다면 캐스크에 조금 더 두면 된다. 서두를 필요는 없다”고 말했습니다.

오늘의 Clynelish 25년은 1995/09/26 증류, Refill Sherry Butt #8679에서 25년 숙성, 2021년 병입, 54.4%, 총 541병입니다.

Signatory Vintage was founded by Andrew Symington in 1988, during Scotland’s “Wh**ky Loch” era.

He was fascinated by one idea: spirit from the same distillery can become completely different depending on the cask.

The name “Signatory” came from a plan to have a famous person sign each release. But the first bottling, a 1968 Glenlivet, sold out before a signer was found.

What remained was another kind of signature: distillation date, bottling date, cask type and number, strength and bottle number.

Andrew recently said that if a wh**ky is forgettable, it should stay in the cask a little longer. No rush.

This Clynelish 25 Year Old was distilled on 26 Sep 1995, matured in Refill Sherry Butt #8679, bottled in 2021 at 54.4%, with only 541 bottles.

Signatory decides which cask is worth remembering.

1988年、「Wh**ky Loch」と呼ばれる在庫過多の時代にAndrew Symingtonによって設立されました。彼が惹かれたのは、同じ蒸溜所の原酒でも樽が違えば別の個性になることでした。

「Signatory」という名前は、各ボトリングに著名人のサインを入れる構想から生まれました。しかし最初の1968 Glenlivetは、サインする人物を決める前に完売。

その代わりに残ったのは、別の“サイン”です。蒸溜日、瓶詰日、樽種・樽番号、度数、ボトル番号までラベルに記されています。

Andrewは最近、「記憶に残らなければ、もう少し樽で待てばいい。急ぐ必要はない」と語っています。

今回のClynelish 25年は、1995/09/26蒸溜、Refill Sherry Butt #8679で25年熟成、2021年瓶詰、54.4%、全541本。

이 병은 Adelphi가 병입한 Bowmore입니다. 독립 병입업체는 여러 증류소의 캐스크 중 가치 있다고 판단한 술을 골라 병입합니다.

Adelphi는 1826년 Glasgow의 증류소에서 시작했습니다. 원래 증류소는 사라졌지만, 1993년 옛 운영 가문의 후손 Jamie Walker가 이름을 되살려 독립 병입업체로 다시 시작했습니다. 기준은 단순합니다. 이름이나 숙성연수보다 맛이 먼저입니다.

이 Bowmore는 1994년 증류, Refill Sherry Butt #554에서 25년 숙성 후 2019년 54.2%로 병입되었으며 총 498병만 생산되었습니다. 1994년은 Suntory가 Bowmore를 완전히 인수한 해이기도 합니다.

This Bowmore was bottled by Adelphi, an independent bottler that selects casks worth presenting on their own.

Adelphi began as a Glasgow distillery in 1826. After it disappeared, Jamie Walker, a descendant of its former owners, revived the name in 1993 as an independent bottler. The idea is simple: flavour before name or age.

This Bowmore was distilled in 1994, matured 25 years in Refill Sherry Butt #554, then bottled in 2019 at 54.2%, with only 498 bottles released. 1994 was also the year Suntory took full control of Bowmore.

Smoke, ash and coastal salinity meet citrus, dried fruit and fruit-cake sweetness. The refill sherry cask adds depth without hiding Bowmore’s character.

今回は Adelphi がボトリングした Bowmore。独立系ボトラーは、さまざまな蒸溜所の樽から価値ある一樽を選び、独自にボトリングします。

Adelphi のルーツは1826年創業の Glasgow の蒸溜所。元の蒸溜所は姿を消しましたが、1993年に旧経営家の子孫 Jamie Walker が名前を復活させ、独立系ボトラーとして再出発しました。大切なのは、名前や熟成年数より味わいです。

この Bowmore は1994年蒸溜、Refill Sherry Butt #554で25年熟成。2019年に54.2%でボトリングされ、全498本。1994年は Suntory が Bowmore の経営権を完全に取得した年でもあります。

煙、灰、海辺の塩気に、柑橘、ドライフルーツ、フルーツケーキの甘さ。シェリー樽が個性を覆わず、Bowmoreらしさを残しています。

1837년 겨울, Bowmore의 원형 교회에 악마가 나타났다는 전설이 있습니다. 모서리가 없어 숨을 곳이 없던 악마는 Bowmore 증류소로 달아났고, 결국 Maid of Islay호에 실린 위스키 캐스크 속에 숨어 섬을 떠났다고 전해집니다.

2021년 Bowmore는 Marvel·DC로 알려진 Frank Quitely에게 이 전설을 라벨로 그리게 했고, 당시 Master Blender Ron Welsh는 이를 23년과 32년으로 풀어냈습니다.

23년은 아메리칸 오크 버번 혹스헤드에서 21년, Essencia® Barrique에서 2년 추가 숙성했습니다. 51.5%, 6,666병 한정입니다.

라벤더, 스모키한 과일, 꿀과 멜론. 파인애플, 훈연육, 커피와 허브가 이어지고, 시트러스와 다크초콜릿, 스파이스가 남습니다.

In 1837, legend says the Devil appeared inside Bowmore’s round church, built with no corners for him to hide in. Chased into Bowmore Distillery, he was later said to have escaped Islay inside a wh**ky cask aboard the Maid of Islay.

In 2021, Bowmore asked Frank Quitely, known for Marvel and DC work, to retell the legend on the label. Then-Master Blender Ron Welsh turned it into 23- and 32-year-old whiskies.

The 23 Year Old spent 21 years in American oak bourbon hogsheads, then 2 in Essencia® Barriques. Bottled at 51.5%, only 6,666 bottles were released.

Lavender, smoky fruit, honey and melon lead into pineapple, smoked meat, coffee and herbs, with citrus, dark chocolate and spice on the finish.
