The Whisk(e)y Fest Takao 2026와 The Drunken Master Whisky Bar 10주년을 기념해 선보이는 Secret Speyside 46년을 이제 Nova Whisky Bar에서 한 잔으로 만나보실 수 있습니다.

이 위스키는 스페이사이드에서 지금도 전통적인 직화 증류를 이어가는 한 증류소에서 탄생했습니다. 1980년 4월 증류, Pedro Ximénez Sherry Butt Finish를 거쳐 2026년 4월 병입되었으며, 총 216병만 생산되었습니다.

나고야, 쿠알라룸푸르, 서울, 시즈오카, 홍콩, 가오슝의 위스키 파트너들이 함께 완성한 국제 공동 보틀링이기도 합니다.

Created for The Whisk(e)y Fest Takao 2026 and the 10th anniversary of The Drunken Master Whisky Bar, this Secret Speyside 46 Year Old is now available by the glass at Nova Whisky Bar.

It comes from a Speyside distillery that still maintains traditional direct-fired distillation. Distilled in April 1980, finished in a Pedro Ximénez Sherry Butt, and bottled in April 2026, only 216 bottles were produced.

It is also a cross-border joint bottling created with whisky partners from Nagoya, Kuala Lumpur, Seoul, Shizuoka, Hong Kong, and Kaohsiung.

At Nova, we serve it in a Lehmann glass.
Take your time with its bright, sweet, and delicate aged layers first; then add a single drop of water to let the aroma unfold, revealing the rancio character unique to old sherry casks.

스카치 위스키에서 올드스쿨 정신을 말할 때, Springbank가 떠오릅니다. 지금도 많은 과정을 직접 처리하며, 마실 때마다 다른 뉘앙스를 보여주는 점도 그 매력입니다.

이 Chieftain’s Choice Springbank 1974 28 Years Old는 Ian Macleod가 병입한 싱글 캐스크입니다. 2.5회 증류와 웜 텁 콘덴서를 유지하면서도, 1992년 플로어 몰팅 재가동 이전 원액이라 당시 외부에서 구입한 상업용 몰트로 만들어졌습니다.

또 초기 wash still은 석탄으로 가열된 적이 있으며, 오늘날에는 직접 가열을 유지하되 연료가 기름으로 바뀌었습니다. 이런 차이가 Springbank를 쉽게 복제할 수 없는 이유입니다.

이 1974년 Springbank는 올드스쿨 Campbeltown의 시간 표본 같은 한 잔입니다. 시간감 있는 스모키함, 짭조름함, 몰트감, 꿀, 초콜릿, 재의 뉘앙스를 지니고 있습니다.

When people talk about old-school Scotch whisky, Springbank comes to mind. It still handles many parts of the process in-house, giving each tasting its own nuances.

This Chieftain’s Choice Springbank 1974 28 Years Old is a single cask by Ian Macleod. It keeps the classic 2.5-times distillation and worm tub condensation, yet this 1974 spirit was made before the floor maltings reopened in 1992, using externally sourced commercial malt.

Another difference lies in direct firing. Early wash stills had once been fired by coal; today, direct firing remains, but the fuel has changed to oil. These details help explain why Springbank is so hard to replicate.

This 1974 Springbank feels like a time specimen of old-school Campbeltown, with aged smoke, salinity, malt, honey, chocolate and ash.

もうひとつの違いは直火加熱です。初期の wash still は石炭で加熱されていた時期があり、現在も直火加熱は受け継がれていますが、燃料は重油へと変わっています。この違いが、Springbank の再現しがたい個性を生み出しています。

この1974年の Springbank は、オールドスクールな Campbeltown の時間標本のような一杯。時間を帯びたスモーク、塩味、モルト感、蜂蜜、チョコレート、灰のニュアンスが感じられます。

어떤 이름은 시간이 지나도 한 세대의 기억을 깨웁니다.

이 31년 싱글 캐스크 위스키는 Highland의 비밀 증류소에서 왔다고 적혀 있으며, 라벨에는 《SAMURAI SHODOWN》의 나코루루가 그려져 있습니다. 1993년 첫 등장 이후, 나코루루는 SNK 작품 속에서 여전히 높은 인지도를 지닌 클래식 캐릭터 중 하나입니다. 그 오래된 존재감은 이 31년 싱글 캐스크와도 자연스럽게 맞닿아 있습니다.

향은 밝은 건포도, 베리, 라즈베리에서 조린 과일, 자두, 블랙커런트, 플로럴 허니, 초콜릿과 커피로 이어집니다. 맛은 부드럽고 온화하며, 말린 과일, 토피, 견과류, 다크 초콜릿, 셰리 향과 따뜻한 스파이스가 긴 피니시를 만듭니다.

라벨의 단서는 Baile Dhubhthaich, Tain의 게일어 이름입니다. Tain에는 The Sixteen Men of Tain이라 불렸던 팀과 스코틀랜드에서 가장 높은 증류기를 가진 증류소가 있습니다.

Some names can instantly awaken the memory of an entire generation.

This 31-year-old single cask whisky is labelled as coming from a secret Highland distillery, with Nakoruru from SAMURAI SHODOWN on the label. Since her first appearance in 1993, Nakoruru has remained one of the most recognisable classic characters in SNK’s universe.

The nose opens with bright raisins, berries and raspberries, then unfolds into stewed fruits, plums, blackcurrants, floral honey, chocolate and coffee. The palate is soft and rounded, led by dried fruits, toffee, nuts and dark chocolate, with a long finish of sherry-like aromas and warm spices.

The clue is Baile Dhubhthaich, the Gaelic name for Tain. And in Tain, there is a distillery once known for The Sixteen Men of Tain, with the tallest stills in Scotland.

요즘 아이러 섬은 Fèis Ìle 40주년으로 한창 축제 분위기입니다. 어제는 Laphroaig Open Day였죠.
그래서 오늘은 Nova에 있는 가장 높은 숙성 연수의 라프로익, The Ian Hunter Story Book 2：Building an Icon｜Laphroaig 30 Year Old를 소개합니다.

이 한정 시리즈는 Ian Hunter에게 헌정되었습니다. 그는 Johnston 창립 가문에서 마지막으로 Laphroaig를 소유하고 경영한 인물이며, Book 2는 그가 라프로익을 향만으로도 알아볼 수 있는 아이콘으로 만든 이야기를 담고 있습니다.

30년 전 기간을 Spanish Oloroso Sherry Cask에서 숙성해, 바닷물 같은 짭조름함, 아이오딘, 훈연육의 강렬함을 더 부드럽고 깊게 감싸줍니다. 젊은 라프로익의 날카로움보다, 시간이 지나 남은 우아한 윤곽에 가깝습니다. 그래도 한 모금이면 여전히 Laphroaig입니다.

Islay is celebrating the 40th anniversary of Fèis Ìle, and yesterday was Laphroaig Open Day.
So today, we are pouring the oldest Laphroaig currently at Nova: The Ian Hunter Story Book 2: Building an Icon｜Laphroaig 30 Year Old.

This limited series honours Ian Hunter, the last member of the Johnston founding family to own and manage Laphroaig. Book 2 tells how he helped shape Laphroaig into the unmistakable icon we know today.

Fully matured for 30 years in Spanish Oloroso sherry casks, it carries sea salt, iodine and smoky cured meat, softened into a deeper, gentler expression. Less sharp than young Laphroaig, more like peat aged into quiet elegance — yet still unmistakably Laphroaig.

아이러 섬에서 생산 규모가 가장 큰 증류소는 어디일까요?

정답은 Caol Ila입니다.
1972년, 늘어난 블렌디드 위스키 수요를 감당하기 위해 기존 창고만 남기고 옛 증류소를 거의 모두 철거했습니다. 그리고 1974년, 새롭게 재건된 Caol Ila는 오늘날까지 아이러 섬 최대 규모의 증류소로 자리하고 있습니다.

1980년에 증류된 이 한 병은, 재건 이후 현대적인 Caol Ila가 막 형성되던 시기의 원액입니다. Douglas Laing의 고급 싱글 캐스크 라인 Directors’ Cut으로, Refill Hogshead에서 33년 숙성 후 캐스크 스트렝스로 병입되었습니다.

꿀, 부드러운 가죽, 스모키한 과실의 달콤함. 피트 스모크 몰트, 달콤한 감초, 그을린 오렌지 껍질, 시원한 허브와 재 같은 스모키함.

시간이 지나도 완전히 길들여지지 않는 술이 있습니다.
젊은 시절의 불꽃이 스모키한 과실미와 썰물 뒤의 바닷바람으로 남는 한 잔입니다.

Which Islay distillery has the largest production capacity?

The answer is Caol Ila.
In 1972, to meet the growing demand for blended whisky, the old distillery was almost completely demolished, leaving only the warehouses. Rebuilt in 1974, Caol Ila remains the largest distillery on Islay by publicly available capacity figures.

Distilled in 1980, this bottle captures the early years of modern Caol Ila after reconstruction. Selected by Douglas Laing for its high-end Directors’ Cut series, it was matured for 33 years in a Refill Hogshead and bottled at cask strength.

Honey, soft leather, smoky fruit sweetness. Peated smoky malt, sweet liquorice, charred orange peel, cool herbs and ash-like smoke.

Some whiskies are never fully tamed by time.
Their youthful fire simply becomes smoky fruit and the sea breeze after the tide.

1972年、ブレンデッドウイスキーの需要に応えるため、倉庫を残して旧蒸留所はほぼ解体されました。1974年に再建され、現在も公開されている生産能力を見る限り、アイラ島最大規模の蒸留所です。

1980年蒸留のこの一本は、現代の Caol Ila が形づくられ始めた頃の原酒。Douglas Laing の高級シングルカスクシリーズ Directors’ Cut として、Refill Hogsheadで33年熟成、カスクストレングスで瓶詰めされています。

蜂蜜、柔らかなレザー、スモーキーな果実の甘さ。ピートスモーク、甘いリコリス、炙ったオレンジピール、清涼感のあるハーブと灰のようなスモーキーさ。

若い頃の炎が、スモーキーな果実味と引き潮の後の海風へと変わった一杯です。

1984년 재가동 이후, 1988년에 증류된 초기 원액. 사과, 시트러스, 멜론, 리치, 청포도, 꽃꿀, 바닐라와 오래된 목가구. 강한 피트보다 달콤하고 섬세하며 조용히 우아한 오래된 Islay입니다.

This Bunnahabhain is from Douglas Laing’s 70th Anniversary Private Stock series, selected from private family casks, hand-bottled and signed by Fred Laing.

Distilled in 1988, not long after Bunnahabhain restarted production in 1984. Apple, citrus, melon, lychee, white grape, floral honey, vanilla and old wooden furniture. Not a heavily peated Islay, but a sweet, delicate and quietly graceful old whisky.
