The Silhouette in Memory
The beloved Taiwanese folk song “Grandma’s Penghu Bay” is one of the tunes that I hummed the most throughout my childhood — “sunshine, sandy beach, sea waves, cactus, and an old sailor…”
Having grown up in Penghu, my earliest memories were filled with with the gentle salt-tinged sea breeze, hills covered in cacti, and above all, my grandma’s care and affection. These elements left me with a deep and enduring connection of—and love for—Penghu.
On a recent visit back to Penghu to see my grandma, I was struck by the weight of time reflected in her aging figure. This cocktail is a tribute to her — a quiet expression of loving memories, gratitude and longing for her.
With a delicate saltiness and a crisp texture, the ice-plant creates a striking contrast when paired with the cactus V.S.O.P curds, which carry a subtle tang reminiscent of fresh greek yoghurt. Together, they evoke a flavour profile akin to lightly smoky cheese.
The cocktail itself carries notes of matured fruit with a subtly floral and spiced backbone. While Hennessy V.S.O.P already has a silky texture and rounded profile, the cactus fruit has a clean berry-like sweetness and a refreshing floral hint that echoes the cognac’s dried fruit notes. The texture becomes smoother and more delicate after milk washing without losing complexity. Only after swallowing does the alcohol warmth from the Hennessy V.S.O.P emerge — like a gentle, caring embrace.
Take a bite of the crystalline ice-plant and follow with a sip of the V.S.O.P cocktail. Alternating between the two creates a nuanced and thoughtfully composed sensory experience - innovative, memorable and deep personal.
