From Cleavers to Corkscrews 🥩🍷 🇦🇹
Most winemakers grow up in the cellar.
Hans Schwarz grew up in a butcher shop.
For years, Hans was the local butcher in Burgenland, Austria. He grew grapes on the side, just a hobby, until a world-class winemaker tasted them and realized they were legendary. Hans traded his butcher’s knife for a pruning shear, but he never forgot his roots. He kept the name as a tribute to the grit and precision of his first trade.
The Profile: Meaty & Bold
• The Vibe: Rich, muscular, and unpretentious.
• The Flavor: A heavy hit of dark forest berries, ripe plums, and a touch of sweet to***co.
• The “Butcher” Twist: Since it’s a blend (often Pinot Noir or Cuvée), look for a hint of smoky spice and dark chocolate on the finish.
• The Texture: Dense and structured—it has “weight” on the palate but finishes surprisingly smooth.
