PORTOBELLO MUSHROOM PASTRY POCKET WITH BASIL PESTO

I have to admit, I love mushrooms, especially Portobello. I do understand that wood base medium growth mushrooms are better in nutrition then dung based medium growth mushrooms. However, many would agree that when you eat something, end of the day it must taste good if not better. I wrap the whole mushrooms in pastry with 2 other mushrooms filled inside besides the portobello muhroom. With a simple none powering pesto, it is an excellent match of texture and flavours.

GRILL RED AND YELLOW PEPPERS SPINACH ON PESTO TOAST

From the olive thyme bread, I wanted something that does not conflict with the taste. So I grilled some peppers and bring out its natural sweetness. Toasted some of my home made bread with some of my homemade pesto spread, top with baby Spinach and grilled peppers and sprinkle with some parmesan bread crumbs. Added some Olives to create the bridge for all the ingredients. Simple but a delicious open sandwich.

BLACK OLIVE LEMON THYME MULTI SEED BREAD

Having balance fresh herbs and black Olives and nothing to cook with, so I decided to make a bread with it combine with my multi seeds which makes it a great item to eat with anything.

GARLIC NAAN MUSHROOMS TOMATO SPINACH PIZZA

It is my usual bad habit to use that is balance and put them together to create something different. To me very most it does not taste fantastic but is still edible haha.... Well I have to say I am rather pleased with this creation. Garlic Naan has the thickness and the flavour to pair with the toppings. The tomato paste ia great compliment to the garlic flavours of the Naan. With simple flavours of Olives, mushrooms, parsley, cheese, the flavours wetter simply superb. The whole dish was polished off within mins. It is great to used as a great party snack.

AVOCADO APRICOT VINE TOMATO MINT SALAD

When a good avocado do come by I like to pair it with some sweetness and something that can bring the taste to another level. The answer is Turkish Apricots, home grown Mint and splash of Lemon Juice. A simple salad to start the day with home roasted peanuts and black sesame seeds. A fresh start to a new day.
