Beef tongue lovers, this one is for you.

When lengua is cooked properly, it becomes extraordinarily tender, succulent and rich.

So when we finally got some beef tongue, we decided not to stop there.

We made birria. Then we made tacos.

Our new Tacos de Birria de Lengua are three corn tortilla tacos filled with slow-cooked beef tongue, infused with the deep, savory flavors of birria.

Forget any idea of tongue being tough or chewy. Slowly cooked, it's exactly the opposite: soft, tender and deeply satisfying.

And inside a warm corn tortilla with all that birria flavor?

We may have created a problem. 😏

Homemade chorizo. Melted cheese. Warm flour tortillas.

There are times when keeping things simple works very, very well.

Our Choriqueso is made with our own Mexican chorizo and melted cheese, served hot with two flour tortillas, pico de gallo and sour cream.

Scoop it, wrap it, add some pico and make a glorious mess of it.

Made for the middle of the table—although sharing is entirely up to you.

The tortilla isn't a wrapper. It's part of the dish.

When we talk about tacos, most of the attention naturally goes to what's inside them.

But in Mexico, the tortilla matters just as much.

A good corn tortilla brings its own aroma, flavor and texture. It has to be warm, flexible enough to hold the filling, and substantial enough to remain part of every bite.

That's one reason we make our corn tortillas in-house at The Missing Burro.

Great tacos don't begin with the filling.

They begin with the tortilla.
