Do you know what Megan and Chef Mau have in common?

They share the same roots. Both come from Chinese ancestry that migrated to Northern Mexico generations ago, becoming part of the culture, food, and identity of places like Sinaloa.

CHINALOA is a very personal menu for both of them, a collection of family memories, traditions, flavors, and stories told through food. Inspired by the meeting point between Chinese and Mexican cuisine, the menu explores regional ingredients, traditional techniques, and the dishes that naturally emerged from this cultural connection over time.

Dear friends,

We are very excited to share with you CHINALOA, a special collaboration between Santiaga and , happening on June 6th.

CHINALOA is a menu inspired by the cultural and culinary connection between Chinese migration and Northern Mexico, especially Sinaloa, where generations of Chinese families became part of the region’s food, flavors, and traditions. The project is also deeply personal for both Megan and Chef Mau, whose Chinese ancestry in Sinaloa continues to shape many of the flavors, memories, and traditions present in their lives today.

Through regional ingredients, traditional techniques, and contemporary cooking, this collaboration explores the meeting point between both cultures in a very personal and honest way.

The experience will be available in two seating rounds:

7:30 PM – 9:00 PM

Our red aguachile brings together flavors from both the north and south of Mexico. The north inspired the aguachile itself, while the achiote from the south gives it that deep red color and a whole other layer of flavor. Finished with fresh white shrimp from the sea. Simple, bold, and very Santiaga.
