TRATTORIA SANEHA: Italian Kitchen Takeover

On July 30th, takes over our kitchen for an authentic 8-course Italian dinner. The menu will translate regional Italian recipes through local Thai ingredients: fermented butter with wild Hin Lad Nai honey from ,handmade canederli in brodo, Surat Thani Bay squid with soft polenta, or grandma’s recipe lasagna.

Wines by the chef’s brother , the full Sala Saneha cellar, and pouring a selection of natural sakes. Live vinyl curated by .

ผมใช้เวลาสามเดือนหลังจากเปิดทำความรู้จักร้านตัวเอง ว่าศาลาเสน่หาเป็นร้านแบบไหน อยากทำอาหารอะไร และอยากให้คนทานอะไรบ้างเวลามานั่งที่นี่

ตลอดทั้งเดือนมิถุนายน ทีมครัวของเราได้ทำงานร่วมกับเชฟห่าวและเชฟเกิร์ลเพื่อพัฒนาสุดยอดเมนู

ปกติผมชอบอาหารที่สร้างสรรค์ ยังมีความย้อนวัย แต่รอบนี้เราอยากให้มันคอมฟอร์ทมากขึ้น อร่อยแบบมาซ้ำได้ อยากให้ลูกค้าประจำกลับมากินอีกเรื่อยๆ เป็นอาหารที่นึกถึงเวลาอยากเปิดไวน์ซักขวด

เมนูนี้ยังคงได้แรงบันดาลใจจากวัตถุดิบไทยและรสชาติที่โตมาในไทยแลนด์ เป็นอาหารที่ผมโตมากับพ่อแม่ มีทั้งข้าวต้มปลา ขนมจีนซาวน้ำ เป็ดร่อน แต่ทำให้มันเป็นอาหารสำหรับไวน์บาร์เต็มตัว

อาหารหลายจานเป็นรสที่จำได้มาตั้งแต่เด็ก หลายจานคือความดัดจริตที่ถูกหล่อหลอมตอนเราโตขึ้น ทั้งนี้ทั้งนั้นความอร่อยคือหัวใจครับ

สุดท้ายก็เลยออกมาเป็นเมนูใหม่ 26 จาน
อยากจะเรียกว่า new season นะ แต่ก็รื้อแทบจะยกใหม่ทั้งเล่ม เมนูปริ้น 4 สีสวยงามครับ

ขอเชิญทุกท่านแวะมาลองสัก 5-6 จานก่อนก็ได้ แล้วค่อยกลับมาเก็บที่เหลือครับ

หรือจะสั่งรวดเดียวทั้ง 26 จานก็ได้ครับ เดี๋ยวผมนั่งกินที่เหลือเพื่อการันตีความอร่อยครับ
