Some drinks are poured, this one is prepared.

The glass comes first. Applewood smoke drawn across the inside and left to settle before anything else enters. Then the ice. By the time the bourbon and house amaro arrive, the smoke has already found its place in the drink.

Smoke is not a finishing touch, but the foundation. That’s how When Night Falls earns its name, long before the first sip.

Light finds its way in the way it does through a canopy: not all at once.

It crosses the main bar in long strips, pools in the corners, catches the edges - all before it fades. The room lives differently depending on where you sit and what time you arrive.

That's the point of a den, it rewards those who pay attention to it.

It starts in the garden.

Thai coriander, grown in-house and distilled into tequila, drawing out its citrus and floral notes with clarity, leaving the drink dry and precise. A light layer of foam settles on top, adding a soft, creamy texture without masking what's beneath. Finished with a mist of aromatic Creole bitters.

Take It or Leave It. Make of that what you will.

The foliage doesn't stop at the door.

It climbs the walls, stretches across the ceiling, pulls shadow into corners where the light doesn't quite reach. Somewhere between a room and the wild that surrounds it, the den sits in both at once.

Small, tart, and unmistakably Thai. Calamansi turns up in kitchens and drinks across the region for good reason. Its citrus is brighter than a lime, with precise acidity.

Fresh calamansi juice frozen at peak ripeness, releasing its brightness gradually as it melts into Calamansi Riposato.

Light in alcohol. An aperitivo that earns its time in the glass.
