Pandan, grown in our own garden.

Soft but distinct: gentle vanilla, a hint of toasted grass, rooting the drink in this part of the world. Slowly infused into aged Mekong rum for a smooth, balanced flavour without bitterness.

Layered with zero-waste espresso liqueur distilled from spent grounds, then softened with cold-infused Silver Needle tea. Milk-clarified for a texture that is creamy, yet light and clean.

Dessert Island is subtle, nostalgic, with a sense of place from the first sip.

Nothing leaves without purpose.

The roselle that colours Into the Red doesn't stop at the glass. What remains is dehydrated slowly and returned as garnish — the same ingredient, a second life.

This is how we approach every element of the menu. Local botanicals, cold-infused to preserve their character. Techniques chosen to reduce, not accumulate. Waste treated as an ingredient in its own right.
