Soft on top. More grounded underneath.

Take It or Leave It carries an almost weightless first impression: a smooth layer of foam, warm mango tones beneath, and a glass that looks deceptively gentle.

Then the structure arrives. Coriander tequila brings herbal depth. Bitter orange keeps the fruit in check. Mango sherbet rounds the centre, while Creole bitters leave a darker edge at the finish.

Fruity. Creamy. Earthy.

The contrast is the point. A drink that looks soft, tastes layered, and keeps its character long after the first sip.

Some rooms are built around the conversation.

Calamansi is sharp enough to lead. It does not have to lead alone.

In Calamansi Riposato, calamansi and tangerine bring two different kinds of citrus brightness. Cinnamon and peach sherbet soften the edges with warmth and fruit, while Bianco vermouth and Grey Goose give the drink a clean, composed frame.

The result sits between freshness and comfort rather than choosing one side.

This is the ingredient story from another angle: not simply the acidity of calamansi, but what happens when that acidity is given spice, softness and structure around it.

A night in the den rarely stays in one glass.

The first cocktail arrives. Then something for the middle of the table.

BAO BAN with fried soft-shell crab, smoked mayo and red curry sauce. SHORT RIBS with taro, beef jus and toasted spices. SPT BUN with burnt leek sauce, slow-cooked cabbage and crème fraîche.

Food changes the rhythm of the night. A drink becomes a bite, a bite turns into another round, and the table slowly takes on a life of its own.

No fixed sequence required.

Just good things arriving at the right moment, while the evening keeps moving.

Last week, we welcomed The Enigma Mansion (.saigon) into Sipping Tiger for an evening of cocktails, conversation, and craft.

Two bars. Two perspectives. One night shaped by curiosity, technique, and the people behind the glass.

The Paper Plane is where the story begins. Bright, balanced, and equal parts by design.

When Night Falls takes the same bones and pulls them somewhere the light doesn't quite reach. Michter's bourbon for oak and warmth. A house-blended Italian amaro that adds the kind of bitterness that sits well with to***co. Olive brine for a subtle salinity that deepens the drink. Applewood smoke across the glass before the pour.

The tiger comes alive after dark. So does this drink.

Kaffir lime is deeply rooted across this region.

The leaves are gently infused into vermouth through a sous-vide process, then redistilled to pull the pure citrus oils and leave the bitterness behind. What comes through is the essence of kaffir: bright, aromatic, native. The same vermouth rinses the glass, setting the scent before the first sip.

House-blend gin, frozen to -18°C poured over. Oloroso sherry for depth. A Martini that carries the jungle in its bones.
