One night, one great challenge, well spent with —being pushed to pair ‘s Nebbiolo with Southern Thai cuisine, a combination that isn’t typically considered an obvious match

Here, we worked our way through a more refined interpretation of Southern Thai cuisine while preserving all the bold, rustic, home-style flavours at our good friends’ fine dining restaurant, .royd . And here’s how it all came together…

Bright red fruit, lively acidity, and fine Nebbiolo tannins of Borgogno Na Name refresh the palate, balancing the richness of coconut curry while complementing the delicate texture of fish and frog legs without overwhelming the dishes

While Borgogno Barolo with deeper structure, firm tannins, and complex notes of rose, tar, spice, and earthy herbs which match the richness of duck beautifully. Its acidity cuts through the fat while its savory depth echoes the smoky, aromatic Kolae sauce and the Duck-Hong
