Our Pork Belly is confited low and slow, then hit with the grill for that char you canโ€™t fake. Served with Grilled Roasted Brown Shimeiji and a Burnt Apple Chipotle that brings the smoke full circle.

Whole Soon Hock, charcoal-grilled till the skin crackles โ€” glazed in lemongrass, lime leaf, garlic, shallot, and a sweet-savoury fish sauce finish. A squeeze of charred lime, and it all comes alive.

Ulam basmati rice rolls, herb-packed and made to be drenched in that bright, punchy lemak assam gravy.
