Inspired by the legendary gatherings of the Astor family, the evening begins with a live four-piece jazz band led by Carol Gomez before DJ Kaylova carries the energy into the after-hours.

Sip on Prohibition-era themed cocktails such as the Tuxedo #29 and Ash and Oak, paired with refined bar bites including the Red Prawn Crudo and Sakoshi Bay Oysters, as Jack’s Club reimagines the timeless allure of jazz lounges and supper clubs in true St. Regis style.

Second Sun is The St. Regis Bar Singapore, Senior Bartender, Shawn’s interpretation of a zero-waste cocktail.

At its core is a spiced vermouth crafted from oxidised wines, champagnes, and orange remnants. Layered with carob, a climate-resilient alternative to cacao, the cocktail is balanced with citric-adjusted orange juice, local trigona honey, Monkey 47 Gin, and finished with a smooth foamee. A delicate dusting of dehydrated vermouth is added for depth.

Each serve is presented in handmade clay cups crafted by the local community.

A spiced vermouth made from oxidised wines, champagnes and orange remnants anchor the cocktail, while carob, a climate-resilient alternative to cacao takes centrestage. Balanced with citric-adjusted orange juice, local Trigona honey, Monkey 47 gin and foamee for a smooth froth, it is finished with a sprinkling of dehydrated vermouth dust for subtle complexity.

Each cocktail is served in biodegradable handmade clay cups crafted by the local community.

A rising female talent within the global bar community, this special evening celebrates the artistry of women shaping the global cocktail landscape.

Renowned for her refined techniques and imaginative approach to flavour, experience a thoughtfully curated collection of Pia’s creations. These include Coconut Milk Punch, inspired by her travels to Vietnam; Crimson Sling, a sophisticated reinterpretation of the iconic Singapore Sling cocktail; and Boulevardier Sbagliato, a reflection of her modern technical approach and creativity.
