Oyster Bar's cuisine is rustic and maintains its integrity by using only the best produce available - oysters are flown in mostly from France and served freshly shucked upon order, we make our own sundried tomatoes using organic tomatoes, we use New Zealand barn eggs and are one of the very few places to use organic garlic - to name a few. We accept only the freshest seasonal produce - we do not have freezers in the kitchen, and all our produce have never been frozen. As part of our efforts to participate in marine life conservation, Oyster Bar does not serve any seafood items listed as 'Avoid' under WWF's 'Choose Sustainable Seafood' program. Oyster Bar is a champagne bar and stocks one of the largest champagne list in Singapore.
