Matthew Ong is a cocktail enthusiast with a deep fascination for flavour, experience and meaning. His curiosity for how taste can express feeling led him to merge his PhD journey into this creative experiment — transforming his academic path into a sensory conversation about resilience, curiosity and discovery.

Experience four evocative phases that trace Matthew’s true-life PhD story — Ambition, Experimentation, Desperation and Exhilaration — each captured in a uniquely crafted cocktail and paired with small bites meticulously crafted by the REX kitchen team.

This is more than a tasting. 🍸 It’s a dialogue — between flavour and feeling, thought and art. As Matthew shares his creative and emotional process behind each drink, you’ll be invited to explore your own reflections, connect with fellow guests and join in guided conversation through thought prompters at your table.
