Commemorate the Tokyo olympics with this limited edition sake! This sake uses an ancient yeast during the Meiji era. This results in the characteristic slight sweetness and refreshing acidity of the sake.

The sake has pleasant aromas of green apple and muscat. The taste profile is elegant sweetness and acidity reminiscent of white wine with slight effervescence. The texture is smooth and velvety from its genshu style (undiluted sake).

We recommend you to drink this sake chilled, and using a wine glass to maximise enjoyment of the aromas and flavour profiles!

Kaze no Mori 507 - ’50’ represents the rice polishing ratio of 50% and ‘7’ refers to the yeast no 7 used in the sake brewing. Kaze no Mori 507 series uses highly polished rice and by carefully managing the fermentation process, Yucho Shuzo 風の森 uses water from the Kongo-Katsuragi mountain (金剛葛城山) and local rice from Nara perfecture to brew their sake. In the 507 series, the smoothness of texture and rich fruit tastes of the sake is accentuated. Try a set of both Akitsuho 507 and Tsuyuhakaze 507! If you are a fan of lighter, fruitier sake, Akitsuho will be a good choice (think pear and white grape aromas). Tsuyuhakaze is for you if you prefer a fuller bodied sake with a pleasant bitterness with strong depth and volume!

The long awaited 鎌倉ビール醸造株式会社 Kamakura beer is back in stock at Healthy Soba IKI Official! This time we brought in a new variation - Kamakura Hayama (葉山ビール) - inspired by Hayama, a small town in Kanagawa Prefecture. Hayama town is rich in nature and known for the beautiful Morito coast. This beer is light and aromatic, with the scent of white wine and grapefruit! We are doing a special three and six bottle promotion now just in time for Father’s day!

This week's theme for sake tasting takes a more traditional twist with Sagaminada - dry sake, light refreshing aromatics with great length and mouthfeel. We will be tasting sagaminada sake from Kubota Shuzo brewery, Kanagawa prefecture 久保田酒造株式会社. We tasted two different spring sakes last Friday Healthy Soba IKI Official - Yamawa Junmai Ginjo and Kinoene Haruzake Kanbashi Junmai Ginjo. Both were fruity and aromatic, with Kinoene Haruzake exhibiting a more saccharine fruitiness with notes of lychee and melon, quite similar to the aroma of Mutsu Hassen Pink Label. Yamawa Junmai Ginjo had a more subdued aroma, with subtle notes of banana and the umami notes of moromi. This fuller bodied sake will go well with smoked duck. Read more below!
