A Truly One-of-a-Kind Wine, Where All Elements Converge Perfect Harmony

When the 2009 vintage revealed its extraordinary quality at the post-harvest blending in June, a small number of superior lots were set aside to create a special cuvée. Made from 100% Cabernet Sauvignon grown on the sunniest upper slopes of Hawke’s Bay, and aged for 16 months in 100% new oak, SSS is produced in an extremely limited quantity of just 1,768 bottles. A rare wine where power, elegance, and time come together as one.

Ayaka Tsuchida, a soprano who performs internationally from her bases in Italy and Singapore, and Yuki Mihara, an award-winning pianist highly acclaimed in Japan and across Europe — these two world-class artists will join us at WABI-SABI Dining for a one-night-only “Opera × Gastronomy” Christmas Dinner.
Beloved arias such as “Libiamo ne’ lieti calici,” “The Jewel Song,” and “Quando me’n vo’ ” will illuminate the evening with festive brilliance. As each piece unfolds, its emotional world, colors, and atmosphere inspire a multisensory journey where sound, aroma, and flavor blend seamlessly into a single story — a dining experience possible only here.

The culinary creations for this special night are crafted by Chef Takuya Yamash*ta, who has led Whitegrass to Michelin one-star status from 2021 to 2025, and Chef Atsushi Terashima of WABI-SABI Dining. Together, they present a Christmas-exclusive menu designed to reflect the character, narrative, and musical color of each aria.

・Spanish style Stewed Beef tongue and Tripe
牛タンとハチノスのピリ辛煮込み

Presenting the Madrid's classic dish - Carillos.
This dish made with French veal tongue and Australian beef tripe, slowly simmered with paprika.
The hot stew is topped with a half-boiled egg, making it a perfect dish to pair with your drink

マドリードで定番のカリョスというパプリカで煮込む郷土料理に、フランス産の仔牛のタンとオーストラリア産の牛肉のハチノスを使用したもつ煮込み。
熱々の煮込みに半熟卵をのせた、おつまみにも丁度いい一品です。

・Smoked Salad
奥日向サーモンの軽いスモークとホワイトアスパラのサラダ

Salmon from Okuhyuga, Miyazaki, Japan, is gently smoked with Sakura branch and served with crispy French white asparagus, salmon roe, and finely chopped finnel.

宮崎の奥日向のサーモンを、店内で飾っていた桜の木を燻製に使用しスモークサーモンに仕上げ、シャキシャキのフランス産のホワイトアスパラに、いくら、フィンネル(ウイキョウの花)を添えたさっぱりかつ、とても香り高いサラダです。

・Vongole
北海アサリとホタルイカ、ホワイトアスパラ、カラスミのペペロンチーノ

This is a luxurious peperoncino with gigantic clams from Hokkaido, firefly squid from Toyama, and calamari from Sardinia, Italy, tossed with asparagus from France.

あさりとは思えない、ハマグリのようなサイズの北海道産アサリと、富山県さんのホタルイカ、イタリアのサルデーニャ島のカラスミに、フランス産のアスパラガスを絡めた超贅沢ペペロンチーノです。

・Hayashi Rice
和牛と新玉ねぎのハヤシライス

This rich buttery rice dish is made with our exclusive Akagi beef and fresh Japanese onions.
The serving of Akagi beef is so generous that you could almost call it a beef stew.

赤城牛を贅沢に使い、日本産の新玉ねぎを使った濃厚ハヤシライス。
ビーフシチューと言ってもいいほどの赤城牛を感じられる一品。

・Gnocchi alla sorrentina
ソレント風ニョッキ

オランダ産のチェリートマトと、フレッシュなバジルとモッツァレラのソースを絡めた、北海道産の北あかりでシェフが作ったニョッキです。
シェフ特製のモッチモチのニョッキは必ず食べて頂きたい一品。

Chef's gnocchi is made with Hokkaido's Kitaakari, topped with Dutch cherry tomatoes, fresh basil, and mozzarella sauce.
The chef's special mochi - texture gnocchi is a must-try dish.
