Roves des Garigues 💚 (Böste) figs
A little taste of the South of France.
I fell instantly for this combination on my very first wine trip to the region — the kind of pairing that just makes sense. The South of France’s answer to Swedish herring & snaps… or a kebab with mixed sauce. You know what we mean.
The combination is no longer on the menu, but while the figs are still hanging from the trees, you’ll find both the figs and their beautiful leaves in the shop. 💚
This week’s — three French beauties:
🐐🇫🇷 Sainte-Maure AOC
A classic ash-coated goat’s cheese from Touraine, in the Loire Valley.
Made in the traditional artisanal way, the milk is left to rest and develop for 24 hours with whey from the previous day — the old repiquage technique.
Silky, delicate and wonderfully goaty.
AOP since 1990.
🐄🇫🇷 Brie de Meaux AOP
The Brie. Probably the most famous — and most copied — cheese in the world.
But there is only one real Brie de Meaux.
Still made by hand, the curds are gently ladled into perforated moulds before being dry-salted and left to mature in cool cellars.
A single Brie de Meaux takes around 25 litres of cow’s milk and 6–8 weeks of ageing, depending on the season and humidity. Its white Penicillium candidum rind gives way to a beautifully creamy interior, with earthy, slightly barnyard notes.
In other words: exactly what you want from a proper Brie.

🐄🇫🇷 Mimolette Extra — 24 months
And now for the weird one.
Mimolette takes its name from mi-mou — “semi-soft” — and is a close relative of Dutch Edam.
But Mimolette has a secret.
It’s not waxed. Instead, during its long ageing, it gets a little help from les cirons — microscopic mites.
Yes. Mites.
They are introduced to the cheese and burrow into the rind, creating tiny holes that allow the cheese to breathe. The affineur then turns and brushes the wheels regularly, making sure the little creatures don’t get carried away.
After 24 months, the cheese is dry, firm and beautifully crumbly, with a salty, nutty flavour and lovely notes of caramel.
