A new season at Halldora 🍂
As summer comes to an end, our outdoor dining season is coming to a close, but Halldora is not slowing down.

This autumn and winter, we’re shifting our focus to private gatherings, intimate dinners and new experiences at the vineyard.

Our Private Dining Room will be available for bookings Tuesday-Saturday for groups of 6-12 guests, for both lunch and dinner.
A private space with its own bar and kitchen, dedicated service and food prepared on site, perfect for:

• Executive & leadership lunches
• Planning days & company gatherings
• Private dinners
• Birthdays & celebrations
• Intimate corporate events
• Special occasions with friends and family

We’re currently putting the finishing touches on our Autumn & Winter programme, with seasonal events and happenings at the vineyard. 🎃🎄

As we enter September, we’re making a small adjustment to our opening hours.

From now on, we’re open Thursday-Saturday, 11:00-18:00 in our outdoor lounge and boutique. Perfect for a lunch, an afternoon coffee and fika, or simply a little vineyard escape.

And yes, we’ve got you covered.

One moment, green berries. The next, deep blue, almost black clusters appearing across the field.

This is veraison, one of the most fascinating moments in the life of a grape.

At Halldora, we grow 21 different grape varieties and they don’t all enter veraison at the same time. Each variety has its own rhythm, which means the vineyard slowly transforms, row by row, variety by variety.

The berries soften, sugars begin to accumulate and acidity gradually changes. Inside each berry, the chemistry is shifting, building the flavours, aromas, colour and structure that will eventually shape the wine.

The grapes still have a few weeks of work to do before we can call them harvest-ready.

Because the best harvest date isn’t found on a calendar.
It’s found in the grape.

Late-summer opening hours at Halldora 🍇

From week 34, we’re updating our opening hours for our Outdoor restaurant and Boutique:

Thursday: 11-18
Friday-Saturday: 11-21
Sunday: 11-18

We’re so grateful for the incredible interest in Halldora and for everyone who has visited us so far. It’s amazing to see the vineyard filled with guests and good vibes!

We’ll keep our outdoor space open for as long as the weather allows, and we’re hoping to continue welcoming you throughout September.

What begins in the vineyard is refined in the cellar.
After pressing, we allow fermentation to unfold slowly, guided by continuous tasting and careful observation.

Steel, oak and qvevris each offer a different environment - shaping texture, structure and expression in subtle ways. Through blending and patience, we guide the wines toward balance.

Today, the wines rest in their vessels, evolving slowly - moving closer to the moment they are ready to be shared.
