It's been five years since I started Runco & Co to share with everyone my journey through the cocktail world. A lot has gone by since, and I shifted my attention to many things during my trip, from explaining my learning process as I started home bartending to showcasing the multiple recipes I have found on Instagram and the many books I have read since I started. I have also met many wonderful people along the way, especially on Instagram, where there is a big cocktail community.

But right now, at the start of the new year, I want to refocus the project into something more profound than just posting recipes for great cocktails. I want to explore more what it means to drink alcohol and especially what it means to drink cocktails. Why do we do it? Why do people enjoy it? What are the rituals involved with drinking? What else is related to spirits? And many other things that surround pouring ourselves a drink.

I'm not sure how I'm going to do it, but what I know is that my goal this year is to focus on things that make mixing and drinking cocktails interesting beyond their recipe.

‘Pineapple Lemonade’
I had some pineapple juice left from a previous batch of cocktails. I managed to make some pineapple syrup with what was left. Perfect for an early-week mocktail.

• 1oz Lemon
• 3/4oz Pineapple Syrup
• 2dash Lemon Bitters
• Soda Top
• Garnish: Caramelized Pineapple Wedge and Maraschino Cherry
• Glass: Double Rocks

‘Bermuda Hundred’
The winter season is getting closer, but there’s still room for some tropical drinks.

Here’s a cocktail by for Pasture in Richmond, Virginia. It uses gin as the base spirit and mixes it with pineapple, lime, and orgeat to give it a tropical vibe. But it also adds Campari to include some bitterness in the mixture. A really delicious cocktail.

• 1&1/2oz
• 1&1/2oz Pineapple Juice
• 3/4oz
• 1/2oz Lime Juice
• 1/2oz Orgeat Syrup
• Garnish: 2 Maraschino Cherry and Pineapple Wedge
• Glass: Double Rocks

Suddenly the sun started to set quite fast. That doesn't give me too much room for things to do during the day, but it makes the perfect conditions to enjoy an early sunset drink.

Still, some tropical vibes left, so I mixed some Cristalino with pineapple. The result was terrific.

• 1oz Cristalino
• 1oz Lime Juice
• 3/4oz Simple Syrup
• 1/4oz Pineapple Juice
• 1dash Peychaud's Bitters
• 2dash
• 1dash Saline Solution
• Garnish: Mint Sprig
• Glass: Double Rocks

‘Hotel Nacional’
There’s still room for tropical drinks even though the summer is over. And I’m a huge fan of tropical rum drinks with added complexity.

Like the classic Hotel Nacional, which mixes light, fresh, balanced Cuban rum with apricot, pineapple, and lime. The rum flavors are enhanced by the apricot liqueur, which also adds a bit of sweetness to the mix but is balanced with the pineapple and lime juice.

It's perfect for a Friday afternoon and marks the weekend's start.

• 1&1/2oz Especial
• 1/4oz Apricot Liqueur
• 3/4oz Pineapple Juice
• 1/2oz Lime Juice
• 1bsp Simple Syrup
• 1bsp Apricot Puree
• Garnish: Mint Sprig
• Glass: Coupe
