Today's Winesday presents a central-European tongue-twister.

Werlitsch, Ex Vero II 2023. From Leutschach an der Weinstraße in Südsteiermark. Austria, on the border with Slovenia.
It has all the variables to make a perfect natty white:

- winery is biodynamic and Demeter-certified since 2006
- made with two best-known whites (Chardonnay+Sauvignon Blanc)
- hand-harvested, wild fermentation
- 2 years in old oak + 1 year in bottle
- no fining and no filtering

This wine is a celebration of freedom and defiance.

In 2019, Slovak officials try to ban cloudy wine — by the proposed decree "wine had to be clear". This wine called Nigori (濁り, Japanese for "cloudy") is in clear protest to that. The law was thankfully overturned after protests of winemakers.

It comes in a pét-nat bottle — and yet it is still.

The colour suggests explosive wildness and funkiness — and yet it is very gentle.

Made with skin contact — and aged under flor.

And made by Zsolt Sütő, a Hungarian from the village of Strekov in Slovakia.

So many contradictions came out in a beautiful murky Welschriesling. 5.5 euro/glass — open now.

This Champagne is a great occasion to learn some wine-related French. Let's begin.

Copains — mates. Alban makes two separate cuvées called Copin, one Chardonnay and one Pinot Noir. This bottle is both of them together. But the copains/copins relation is our educated guess.

Dégorgement — the moment the frozen plug of spent yeast gets shot out of the neck and bottle gets corked. Alban did it on 4 February 2024.

Extra Brut — less than 6 grams of sugar per litre. There's just 1.5 in here.

Grand Cru — Verzy is one of 17 grand cru villages out of 319 in Champagne. But nowadays It's more of a "rich heritage" statement than a quality one.

Récoltant-manipulant — a grower who makes his own wine instead of selling the grapes on. It's printed on every back label as two letters and a number. This one reads RM-28326-01.

Vendange — harvest. This one is all 2020, with no older reserve wine blended in.

Anyway. Gorgeous grand cru Champagne open today:D 8 euro/glass
