Originally from Jamaica, Chef Bill has honed his craft in some of the world’s most dynamic culinary cities, including Toronto, London, Amsterdam, and now Stockholm, where he leads the kitchen as Head Chef of Grus Grus Wine Bar.
Through Patois, Bill reimagines Jamaican cuisine across continents, crafting dishes that reflect both his roots, experience and his travels. The result? Not a traditional Jamaican food, but rather a deeply personal interpretation-where culture, innovation, and storytelling form the menu!
