I’ve captured the essence of the cruise journey in a glass. Crafted with a sous-vide infusion of grilled pineapple, nutmeg, cinnamon, and vanilla pods—flavors gathered from distant shores. When married with the double-charred wood of Jameson Black Barrel, those toasted oak and vanilla notes don’t just sing; they tell a story.
Grilled Pineapple Puree; For a deep, caramelized sweetness & body. Pineapple which symbolizes Hospitality that we offer over cruise industry.
To bridge the gap between the vast ocean and the barrel, I’ve added Saline Solution. A subtle nod to the salt spray of the Ocean Breeze a perfect palate cleanser.

Batch 1 Recipe ( Jameson Black Barrel Smoked Pineapple Infused )
•500ml Jameson Black Barrel
•12pcs Grilled Pineapple Wheel
•8pcs Cinnamon Stick
•8pcs Vanilla Pods
•3tbsp Ground Nutmeg
-Sous Vide Infuse at 145°F (4 hours)
-Strained over coffee filter

Batch 2 Recipe ( Grilled Pineapple Puree )
•12pcs Grilled Pineapple Wheel (from Infusion)
•250ml Demerara Syrup (1:2 ratio)
•250ml Freshly Squeezed Lemon Juice
-Blended & Strained over Mesh Strainer

Cocktail Ingredients ;
•60ml - Jameson Black Barrel Smoked Pineapple Infused
•60ml - Grilled Pineapple Puree
•2 drops - Saline Solution
-Shaken & Strained over Coupé Glass

Garnish : Tajín Rim, Dehydrated Pineapple, Smoked Wood Chips: A fiery, aromatic finish that lingers like a Golden Sunset over the horizon.
