While many rely on pineapple for acidity, to elevate the dish our chefs have chosen the world-class sweetness of mangoes from our home province. This innovation brings a more refined, natural tang that cuts through the richness of the oyster reduction. The dish is finished with a dusting of Asin Tibuok, a truly unique Boholano salt, bridging the gap between the land and the sea.
