At the core of our feature serve, Belladonna, is Bacardi Carta Blanca, a base spirit that could keep things in line without flattening the drink.

Crisp, dry, and almost weightless. A flicker of white pepper spice cuts through the softness, while fresh cane character that feels almost like coconut water keeps everything clean and linear.

Floral tones from sampaguita and jasmine can easily tip into something too round, too perfumed. Tomato water, with its subtle metallic acidity and umami, can also push the drink toward something a little “soupy.” So the base had to do the opposite: tighten, dry, and define.

It’s the perfect anchor to hold everything together, so everything else can land exactly where it should.

Fear shapes perception before understanding. Long before science, humans relied on survival instinct—many toxic plants contained bitter alkaloids, teaching us to read bitterness as danger. What began as protection became reflex.

Belladonna is built around ingredients once shaped by fear: tomatoes and sampaguita.

Tomatoes, part of the nightshade family, were feared in Europe for centuries and widely believed to be poisonous.

In Philippine folklore, sampaguita is often linked to the spirit world. Its fragrance blooms at night and for some, signals the presence of ghosts or the unseen.

We started playing with this idea, took these ingredients, and reframe them into something open and inviting: a bright, fruit-forward Michelada riff made with Bacardi Carta Blanca, tomato, jasmine, peach, and sampaguita water.

A superstition, now served ice-cold. 🍅

When we were conceptualizing Two Sides of the Same Serve, we knew we needed a base that could stitch the flavors together while giving the drink its own sense of structure. Something that could hold everything in place, but still leaving room for others to contribute.

That’s when we realized Hendrick’s Gin was exactly the playground we needed. Floral, crisp, and a little peculiar: it’s both anchor and sandbox that holds the drink together while giving space for flavors to play, interact, and experiment.

Contrast and balance live in every corner. Two very different sides in one seamless serve, like two voices speaking at once, and in perfect tune.

TWO SIDES OF THE SAME SERVE

It’s interesting how Gamet and Malunggay sit at opposite ends of how we perceive value.

Gamet is scarce, a wild reddish-purple seaweed harvested along the northern coasts of the Philippines, particularly Ilocos. It can only be gathered during specific tides, often in risky conditions. Because access to it is limited, Gamet is perceived as premium.

Malunggay or moringa, on the other hand, is abundant. A fast-growing tree found across the Philippines, it grows freely in backyards and sidewalks. Its nutritional value is widely known, yet culturally undervalued because it is so easy to obtain.

Scarcity creates demand. Abundance creates neglect.

Two Sides of the Same Serve brings these opposing ingredients into one glass, not in competition but in conversation. And the result is an oxymoronic serve that reflects not just contrast in flavor, but how we assign worth.

At the core of our featured serve, Ulikan Horchata, is the Philippines’ very own Don Papa Rum - a premium, single-island rum crafted from 100% sugarcane molasses and matured in the volcanic climate surrounding Mount Kanlaon.

Aged in ex-Bourbon and ex-Rioja American oak casks, Don Papa reveals layers of roasted banana, rich vanilla sweetness, ginger spice, and bright mandarin zest — really golden and rounded. Notes that shine beautifully within our Ulikan Horchata.

This serve is just the beginning of a longer dialogue as we explore more with Don Papa Rum. Something exciting is already in motion. Stay tuned!

ULIKAN HORCHATA

Both Horchata and Ulikan Red Rice come from people who made something lasting out of what they had.

Horchata began in Spain as a humble drink made from soaked tiger nuts, water, and sugar. A cool, nourishing poor man’s refreshment for the heat. When the Spanish crossed the Atlantic, the recipe traveled with them and was reinvented in Mexico using rice instead of tiger nuts, enriched with cinnamon, vanilla, milk, and sugar - turning it into something entirely their own. What began as survival turned into comfort.

Ulikan Red Rice, on the other hand, survived through resistance. When commercial white rice took over the lowlands, Tagukami farmers kept planting Ulikan. Season after season, even when no one bought it, even when harvest barely filled a sack. It endured not because it changed, but because people refused to let it go.

One kept its soul; the other kept its form.

Ulikan Horchata is our meeting point in cocktail form, a reminder that culture survives in the small things we choose to keep. A recipe. A grain. A ritual. Each carried through time by those who cared enough not to forget.
