Not long ago, the search for 100% filipino craft beer was likened to the search for the holy grail. Faced with paltry selections of watered down, mass produced, barrels of swill – the thirsty beer drinker longed for craft – made by beer drinkers, for beer drinkers. The tale of the barman continues to be passed down from 1 eager beer drinker to the next – that around the same time as the invention of fire – the kernel of truth which was to create a craft beer so fine, angels would sing from the heavens and beer would flow like wine from chalices adorned in the most immaculate of cathedrals.
In the year of the snake, Joe stood proudly on the stoop of his ancestral home, prominently situated in Poblacion, Makati – “My fellow people – I hereby promise to you, to go forth – learn the craft of malted barley, bitter hop, and artisanal water – seek the knowledge of the Trappist monk – and bring to you beer so exquisite, it will unite us as one – with a common goal: to drink craft beer!”
And return Joe did, armed with the secrets of the monk, and a burning desire to make good on his promise.
Some might argue that it is the fact that all Joe’s brews are made locally from the blessed hands of Joe himself. Some might argue that it is the attention to detail, using the finest ingredients, and best artisanal waters. Some might argue that it was divine intervention anointed during Joe’s travels to the University of California. All will tell you that it is the finest craft beer created this side of the 10thparallel.
