Recently, there has been a circulating Facebook post about the lethality of a certain grilled egg delicacy (i.e., grilled balut or inihaw na balut) due to its production of hydrogen sulfide (H2S). Although this post was meant to inform consumers about the associated health risk, it seems to be misleading. While the explained science in the post is true, the conclusion was taken out of context.

The proteins of the egg whites contain sulfur that reacts with hydrogen during the heating of eggs, resulting in the formation of H2S.[1,2] Although a known toxic gas, especially during exposure at moderate to high concentrations,[3] H2S is released in such small amounts that it cannot pose any health risks.[1,2,4] For additional context, the highest H2S concentration that can be produced by an egg is around 0.2 ppm which happens when the egg is already rotten.[5] Meanwhile, the allowable exposure limit for H2S is 20 ppm and must reach a concentration of 100 ppm in order to cause dangerous effects on health and life.[6]

Additionally, as the heating prolongs, H2S goes inwards towards the egg yolk due to the decreased solubility of the egg white.[1,2] This gas reacts with the iron subsequently released from the yolk during heating, forming iron sulfide.[7,8] This dark-greenish tinge observed on the surface of the yolk due to overcooking may taste and appear unappealing, but it is not considered detrimental to human health.[9,10,11]

Kamakailan lamang ay may kumakalat na Facebook post ukol sa hindi ligtas na pagkonsumo ng inihaw na balut dahil umano sa nakalalasong kemikal na hydrogen sulfide (H2S) na nagmumula sa pag-iihaw nito.
Bagaman hangad lamang ng naturang post na magbahagi ng kaalaman patungkol sa panganib na kaugnay rito, naiba ang interpretasyon o nawala sa wastong konteksto ang ipinahayag na siyentipikong eksplanasyon.

PLANT BASED SWEET TREATS!

Reese’s Peanut Butter Cups are getting the vegan treatment.

The Hershey Co. said Tuesday that Reese’s Plant Based Peanut Butter Cups, which go on sale this month, will be its first vegan chocolates sold in the US.

A second plant-based offering, Hershey’s Plant Based Extra Creamy with Almonds and Sea Salt, will follow in April.

The chocolates are made with oats instead of milk, Hershey said.

Hershey has experimented with vegan chocolate before. It sold an oat-based chocolate bar called Oat Made in some test markets starting in 2021. But the new products will be the first sold throughout the U.S. under the “Plant Based” label.

Hershey said consumers want choice and are looking for products they consider healthier or with fewer ingredients, including reduced sugar and plant-based options.

Hershey also introduced an organic version of Reese’s Cups in February 2021.

Younger consumers, in particular, are looking to reduce consumption of animal-based products, says Euromonitor, a market research firm. In a 2021 survey, Euromonitor found that 54% of Generation Z consumers were restricting animal-based products from their diets, compared to 34% of Baby Boomers.

Hershey said it developed plant-based versions of Reese’s Cups and Hershey bars — some of its most pop**ar products —because there’s a dearth of mainstream plant-based chocolates in the US market.

The plant-based versions will cost more. Hershey wouldn’t share details because it said retailers set final prices.

And ditching the dairy won’t cut calories. While Hershey didn’t release all of the nutritional facts, the 1.4-ounce package of plant-based Reese’s Cups have 210 calories; that’s the same number of calories as a 1.5-ounce package of traditional Reese’s Cups. | via Associated Press

Before the mid-1970s, mangoes weren’t considered commercially viable due to their erratic fruit-bearing habits. “It only fruits one month in a whole year,” the Filipino scientist and horticulturist Dr. Ramon C. Barba once recalled in an interview. “And if it fruits well one year, it doesn’t fruit the next year. Even in the regular season, it is erratic.”

Some farmers tried to “smoke the trees”—burn leaves and other materials under the trees—to stimulate flowering. This proved to be not only a tedious practice but a costly one as well. “You have to smoke out a mango tree for two continuous weeks to get results. It was very expensive because you had to burn lots and lots of grass to sustain,” Barba said, describing the process to the Inquirer. Eager to find a way to produce mangoes throughout the year, the scientist took it upon himself to look into the matter closely.

Here's a coffee store I'm a big fan of. They have such a unique way of tapping customers. If you are enjoying the beach or taking a walk around the city, you might just stumble on their pop-up cart. We were crazy to taste their coffee we had to literally follow their trail.

We're passed by their cart at Lumangbayan but we decided to just grab a coffee on our way home. But ohhh boiii, the cart was gone! We went to Nacoco where they are usually spotted but they were not there. We sent them a message and really glad that they are still accommodating orders for pick-up then we head over to their place.

It felt like an mini adventure just to get the coffee. Instead of going straight to our home we had to find a cool spot to enjoy it. We wish to sip our coffee by the beach during daytime but we just cannot find time for it. Anyway, that night we found ourselves at Xevera's famous hilltop with a view of the city lights. First sip of the coffee and we knew it's worth the chase! The Barako Iced coffee has a strong earthy somewhat smoky or woody taste to it and a sweet aroma. On the sweeter side is the Iced Spanish Latte. It has a really creamy and sweet taste to it from the milk and condensed milk added. You can still taste the coffee but not as full as espressos.

The next time we stumbled onto their cart was in front of a food plaza were we were having our dinner. Before heading home, we just have to grab one coffee (sharing is caring when you don't want overspending haha). We can't really decide what to choose and the barista was so kind to help us out. I found out he's also the owner and learned from him that he uses locally sourced materials, the syrups are even hand-made by them. Such a cool guy and he is very passionate and knowledgeable about his craft. We got our Salted Caramel Macchiato and he even gave us a cup of the rest of the coffee he just brewed. Salted Caramel Macchiato is on the stronger side of coffee but still creamy and sweet. So we dumped our brewed coffee into it and of course we stayed awake that night and few hours of the day after haha.

The quality of their product tastes like you're getting more out of what you paid for. On top of that I genuinely love the branding and the advocacy behind building the business. We still have a lot of flavors we ought to try and the whole experience wouldn't be complete if we can't have it from their location at Parang Beach. I'm really excited watching this social enterprise grow.

🍔 JUANCIO'S GRILLED BURGER HOUSE 🍔

This post is long overdue but it's still worth sharing. It was rather rainy that time we went to Juancio's but as we got there we didn't really felt gloomy at all. The place has a cozy warm vibes. Maybe it's the whiff of burger patties grilling at the entrance.

We picked a table and next to us were bunch of guys really juiced up for their orders to arrive. Few minutes 3 huge burgers was served-- the famous PG (Palaging Gutom) Challenge. Finish a giant burger with triple grilled patties, 2 eggs, 300 grams fries, bacon and a cup of iced tea within 5 minutes and it's all for free. Our order was serve but our gaze was locked to them while they devour their burgers. It was pretty fun for them and we are thrilled as well just watching them. They did not win the challenge but they promised to come back and have their faces posted on the champ's wall.

We finally enjoyed our burger steak and we also got their burger meal. The patty was so flavorful, hearty and juicy. The charred parts gave it a little crunch. The gravy is really rich and delicious it kinda tasted real close with the creamy mushroom sauce of Jollibee I had to dip my fries into it. The fries is crunchy and not too salty. We're so full we had to take home the burger. As we've expected it was really good, same juicy patty and the veggies stayed decently crunchy. Over-all the food is really worth what you paid for.
