At the heart of the experience is Mt Cook Alpine Salmon, sustainably sourced from the glacial waters of New Zealand’s Southern Alps. Celebrated for its delicate texture and signature buttery finish, this premium freshwater King salmon is paired with a silky garlic chive emulsion, toasted furikake beurre blanc layered with umami depth, and Mt Cook Ikura Caviar cured traditionally in soy and sake.
