To celebrate World Whisky Day, we’ve done something a little different.

For the first time, and the last, we stepped away from our New Zealand peat to try something new. Operation Manuka is distilled from 100% Manuka smoked malt, from a single cask. Bold, smoky, and unmistakably New Zealand.

A tribute to our founder Mark, a surgeon with a steady hand and a taste for the extraordinary. Operation Manuka reflects the surgical focus and creative freedom that define Waiheke Whisky. The name says it all.

We’re quite pleased with the results. We think you will be too.

Peat, but not as you know it.

In Aotearoa, peat isn’t built on ancient forests, it’s grown from living wetlands of the South Island.

No dense wood. No heavy iodine or smokiness flavour. Just a softer, greener smoke that speaks of place.

🏆 The 2026 World Whisky Awards have been judged and the results were released from London a few hours ago.

🇳🇿 We are equal parts humbled and ecstatic that MOSS 2 has been awarded Gold & Category Winner for New Zealand Best Single Malt 12 years & under.

🥃 MOSS is the gateway to New Zealand peat and the story we tell about this unique experience of our country.

🇳🇿 New Zealand peated barley, artesian water drawn from deep below the ocean and our island.

🥃 Whisky aged here, after being milled and mashed here, fermented and distilled here.

🥃 MOSS is a whisky we are very very proud of, and we’re grateful to your support and enthusiasm over our 16 year road to 2026.
