Through out history, we learned that many aboriginal communities around the world cook their food over hot rocks. It's efficient technique developed thousands of years ago, for preparing large quantity of food. A pit were dug in the ground, then a fire was built in the pit and large rock such as limestone or basalt were added on top of the burning wood and coals. Food was then cook on top of it, which is known as Hot Rock Grilling, and sometimes these hot rocks are put into water to make water boil, this is known as Hot Rock Boiling. Bring this ancient cooking technique to modern dinning experience, lava rock has been used. Cooled lava rocks tend to hold heat inside rather than releasing it quickly, so it makes an excellent cooking stone. These rocks are placed in a specially designed oven that keeps rocks around 400 degrees, at this temperature, allows you to sears the food faster and lock all the juice and flavours within. At Palm Bar, our Rock Grill Meals are presented with a protective ceramic serving tray with two sided trays, which allows you to have two side dishes from out delicious menus. www.123bar.co.nz
