Hakushu 12 Year Old Bottling Note
This wonderful peated Japanese single malt whisky hails from Hakushu distillery, owned by Suntory. The distillery resides in the forests of Mt. Kaikomagatake, with the original Hakushu distillery built in 1973. Another building was added in 1981, called Hakushu Higashi. Rather fittingly, it boasts a fresh and foresty flavour profile.

Suntory has confirmed it will discontinue its Hibiki 17 Year Old and Hakushu 12 Year Old Japanese whiskies “at some point” after this year due to stock shortages.

Macallan make the best Macallan out there. Sometimes it’s a bit underwhelming, there’s the odd misfire for sure. But, in general the product is exceptionally well made, there’s just so much attention to detail that it sets the bar and becomes a rule for the rest, rather than an exception. Times may change, fashions come and go but Macallan is a producer that creates a product which is timeless, ironic when they’re dealing with a product that has time as a major ingredient. And the time thing, or in this case the NAS thing, is one thing that some people may argue against, but what macallan can do with a NAS whisky is testament to their art and an understanding of their craft which few can match. The Edition range is a very good example of this, and in this case No.4 (for my first review).

Hibiki 21 is a good whisky; it’s just about everything you could want in a dram from Japan. Hibiki 21 is made using single malts from Hakushu and Yamazaki and grain whisky from chita that were aged in a combination of American (ex-bourbon), European (ex-Sherry) and Japanese (Mizunara) Oak. Each component was aged for at least 21 years before being selected and blended together to create this lovely whisky whose base is supposedly Yamasaki sherry casks.

The Hibiki 21 might not be officially discontinued, but it’s so hard to find in America these days that it might as well be and reports from Japan tell a similar story. Age statements the world over have been declining and disappearing at an accelerated rate and with that decline we’re seeing the extinction of beautiful and nuanced whiskies like the HIbiki 21 and others. Hopefully with distilleries increasing stills and ramping up production it’s not so much a goodbye as a see-ya-later for things like this.

BALANCE, BODY & FEEL

Whiskey Review: Old Parr Superior 18 Year Old Whiskey. ... “The whisky arrives in the mouth with a soft chewy peat. The soft peat completely envelops the palate, and it is as if you have to chew through the smoke and peat to get at the other flavours.
