For Didier and Catherine Champalou, that meant taking a lighter hand with Chenin Blanc in the Loire Valley — letting the freshness, texture, and minerality do the talking.

A producer known for working with a lighter hand, “Adèle” leans softer — apple and honey come through first, with a touch of chamomile and green spice in the background. There’s a gentle creaminess to it, with just enough freshness to keep it in balance.
