WHAT WE READ 1.0

Many of our guests often ask how we’ve learned to use different techniques to create cocktails. Our answer has always been simple: we read, and then we experiment.

In the coming days, we’ll be sharing some of the books we’ve found especially valuable along the way. We hope these recommendations can be helpful to anyone, whether you’re a bartender or not.

Amazake (甘酒) is a traditional, sweet Japanese beverage made from fermented rice. The name literally translates to “sweet sake”. We ferment our amazake by the traditional ways. Steamed rice mixed with water and koji (aspergillus oryzae), sous vide in 60degree water for 10 hours, let the enzymes in the koji break down the rice starches into simple sugar, creating a natural sweet & nutty drinks.

Our RICE is paired with amazake & kaffir lime leaf, bringing a bright citrus lift that cuts through its rich, creamy body. Layered with tequila reposado and sweet potato shochu, to created a deeper & complex flavour profile.
