Some ingredients are discovered long before they reach the kitchen.
Chef José Luis Hinostroza (Jose Luis Hinostroza) and the team work closely with local producers to source seasonal ingredients that express the biodiversity of the Yucatán Peninsula.
The gooseberry is one of them. A rare fruit from southern Yucatán, valued for its vibrant acidity and found only for a short time each year.
