Our signature dishes will be exclusively prepared with local vegetables and flavors which characterize Chef Federico's kitchen.

Our Executive Chef, Federico Cappi, highlights the exotic flavors native to the Yucatan Peninsula by infusing his dishes with rustic touches and local techniques.

For four nights, our signature wood fire techniques will be on display throughout your dining experience. A special menu curated by Federico will highlight regional ingredients, flavors and colors.

Mestiza de Indias, a local purveyor based in Valladolid, will provide our chefs with locally sourced organic ingredients with a message: to care for the land that feeds our palettes. Through action based community events, Mestiza de Indias increases sustainable awareness within the farm-to-table movement.
