We are currently doing our first 35L batch in our brand new 65L Digiboil Kombucha Boiler made of the industry-standard 304 Stainless Steel. I know what you're thinking and you're right! Kombucha brewing has never looked so sexy.
The Digiboil is the first step in our path to becoming a commercial brewery and making the perfect Kombucha. For us this starts with brewing the perfect cup of tea, which is where the Digiboil excels. We simply set the digital controller and the machine automatically brings the water to the desired temp and then maintains it at that temp, allowing for perfect steeps at a perfectly maintained temperature (which varies for black and green tea).
The second step in our path to brewing the perfect Kombucha is making the freshest juice from the finest locally-sourced and in-season ingredients. We begin by cold-pressing our fruit to ensure the highest health benefit and best overall flavor before filtering our juice to remove the pulp and particulates that can make kombucha cloudy.
Along with our Digiboil we now have new filtration equipment at 100, 200, 300 and 400 mesh filtration levels (down to 37 microns). In the future we will have 500 and even 600 mesh filtration (nearly 20 microns). The finer we go, the more champagne-esque our finished product becomes, keeping in line with our purpose: to brew the finest kombucha you've ever tasted!
Another new tool in our arsenal is a Brix Meter, allowing us to calculate the exact percentage of sugar in our starting stage and each juice we make, which is an important part of calculating out the finished sugar content of our final Kombucha end product.
We are still a couple months away from being ready to offer Kombucha to our local community, but we are getting oh so close! We have only a handful more tests to run on various flavors and refinement methods. Soon we will be ready to deliver the finest Kombucha you've ever tasted!
