The History of Sardinian Gastronomy: A Journey Through Tradition and Identity

Sardinian cuisine is a reflection of the history and culture of a unique island, suspended between the sea and the mountains. Its roots go back to ancient times, when the Nuragic people raised livestock and cultivated grains. Over the centuries, Phoenicians, Romans, Pisans, Aragonese, and Spaniards have left their mark on local culinary traditions.

A pastoral and maritime soul
While sheep farming made dishes like porceddu (roast suckling pig) and pecorino sardo famous, the coasts have gifted Sardinia with specialties like bottarga (cured mullet roe) and aragosta alla catalana (lobster Catalan style).

Bread and pasta: pillars of the diet
Bread holds a sacred place in Sardinia, with varieties like carasau (thin and crispy) and civraxiu (soft and fragrant). Handmade pasta is another highlight, with treasures like malloreddus (small semolina gnocchi) and culurgiones (ravioli stuffed with potatoes, cheese, and mint).
