- Knowledge of best cooking practices
- Minimum of 3 years experience A La Carte
- In possession of an employment licence (work permit)

Route 81 is the old bus route which was used in olden times to transport thousands of Maltese and tourists from the City of Valletta, through Saqqajja Hill in Rabat. Combining this with the belief that “good food starts from its root”, was the inspiration for the name of this restaurant – ROOT 81.

Throughout these 4 years, we are so proud of the team we have built, all that we have achieved and all our esteemed clientele who we are always so happy to welcome and serve. As always, we thank you for your support 🙏❤️
