La propriété « MANDA de LAOS » appartient a ma famille depuis des générations, Les 3 étangs de lotus sont enregistres au Patrimoine Mondial de l’Unesco depuis 1995. Maman Phiew est née a Luang Prabang en 1930, elle est l’ainée d’une famille de trois enfants. Sa maman est commerçante et son père travaille au Palais Royal ou il s’occupe d’organiser les cérémonies de baptême a l’occasion des nai
ssances des enfants royaux. Comme toutes les jeunes filles de Luang Prabang de cette époque, elle a appris a faire la cuisine traditionnelle. Elle se marie avec un jeune homme et ils auront 10 enfants dont 5 filles a qui la maman apprendra a cuisiner les plats traditionnels. Sa vie quotidienne est remplie d’attentions pour les enfants et son mari. Elle passe un temps incalculable a s’occuper du bien-être des siens et particulièrement de leurs repas. Les plats traditionnels comme le laap nécessitent une journée de préparation, rien n’est fait au hasard. La vie quotidienne a change mais en souvenir de la maman - qui se traduit par Manda en Laotien - nous allons perpétuer les traditions et vous montrer comment on cuisinait dans le temps où l’on avait le temps…

My Mum Phiew was born in 1930 in Luang Prabang, the eldest of three children. Her mother owned a small shop where she sold household goods and her father worked at the Royal Palace where he was responsible for organizing baptisms on the occasion of royal births and other ceremonies. Like all young ladies in Luang Prabang of that time, Maman Phiew learned to cook traditional Lao dishes from her mother. When she married my great grandfather and they had 10 children including 5 girls, she passed this knowledge and her love of Lao cooking on to them. Maman Phiew’s daily life was spent looking after her family and her small business, and she was always focused on her children’s welfare and particularly their meals which required great attention. In the days before fast food and eating out, traditional dishes such as Laap required a full day of preparation with nothing left to chance or guesswork. While daily life has changed in Laos and around the world, here at “ Manda de Laos “ we carry on the traditions and spirit of Maman Phiew ( Manda means ‘mother’ in Laotian) , dedicated to sharing how one cooked and ate in the past when we had time ...
