We'll be honest. We don't really know what a 'Red ale' is supposed to taste like. Or a 'Blonde ale' or a 'Dark Ale' , blah blah blah. Why do people describe flavor profiles with shades and colors? It's so annoying.

But we know what a good beer is, and we have learned through the brass tacks of it what beers do what over time, especially here in Cambodia.

Outset makes damn good beers, damn good beers. You'd be lucky to drink one. And this one, like many of it's peers, has impressed us with how much it has improved with just a little bit of shelf time. Now is the time to grab one here.

We've said it once, and we'll say it forever.

Get it while it's ripe.

So this is our drip bowl. This time after almost 24hrs exactly. We didn't clean it last night intentionally, because we have never seen it go this far, and we were curious. This was after one day, almost exactly. Yesterday at this time, this drip bowl was cleaned with soap and water, and just enough bleach to make your nose sting a little. And still this, this incredible thing, just 24 hours later. We're gonna have to dump it and clean it right after this post, but we're almost sad we have to. It's been incredible to see this thing blossom in real time.

We're also kinda terrified though, cause we've seen The Last of Us, and this s**t grows crazy fast.

The Raspberry Ale, from Black Bamboo brewing, is another excellent example of a live beer that mellowed quite well with age.

Here at The Local, we have learned a lot about craft beer in Cambodia this year. Who's beers do what over time, who's beer sell to what type of person, which ones last the longest, Etc. Etc.

This one has always been good, but again, this one aged very well.

The astringent qualities of the raspberry have diminished over time, as have the 'beer' notes, if you will.

What's left, after almost three months in our fridge, is a very mild, not overly sweet, raspberry forward beverage, almost mead like in its simplicity.

I cannot express enough how much our beers change and evolve over time. Even if you've had one of our bottles, come try it again. Enjoy the journey with us.

At The Local, we love how vibrant life is here in this country. This picture? It is of our drip bowl at the end of the night. Our tap trays drip into this bowl over a course of a nine hour shift, all day long. We judge each other over how much is in that bowl, and heckle each other over it. The less in the bowl at the end of your shift, the better you did. But that's not the point of this picture. This picture is to show you how determined life here is. Those roots you see are a culture that started this morning, after we cleaned and bleached the bowl. You can see the spot where the beer dripped in all day, and how the roots spread, in just nine hours. This bowl gets sanitized every night.

Life here is so vibrant and alive.

And it continues to amaze us, in the most simplest of ways, everyday.

Introducing, for at least the third time, the Local Flora. A dragon fruit IPA made exclusively for us, and has been in our bottle fridge since we opened in December.

It is not often you see a guy trying to push a beer on you aggressively he'd rather drink himself.

I'll be honest with you, I didn't get it when I first got my hands on it. I didn't understand how that delicate a flavor could be brought to an IPA and not have the bitter flavors take it over.

It was not my favorite at first, but time has changed my mind.

Yuki from Flowers Nanobrewery is the most prolific brewer I know in Cambodia, my favorite one here, and accidentally or not, a master at crafting a living beer.

For better or for worse.

This time, this one? It tastes fu***ng fluffy right now. I don't even know how to explain that to you or anyone else, but it tastes fluffy.

It might not next week, so get it while it's ripe.

Or don't. Save more for me.
