Why some seafood doesn’t make it onto our menu 🐟🌊
When local suppliers bring in tuna, crab and other local seafood, our chefs don’t simply accept the catch. They check and select what comes into the kitchen, while our sustainability team carries out random checks to make sure our responsible sourcing standards are being followed. 🎣
We want to support local fishermen and suppliers wherever we can - but never at the expense of the ocean around us.
Sometimes responsible sourcing means saying no. 🌊💙
