グリニョリーノ主体🍇
1982年植樹の古木ブドウを使用し、セメントタンクで12ヶ月熟成。
イチジクやラズベリーの果実味に、伸びやかな酸が重なる軽やかで奥行きのある味わい。

🍷 VINAGE 2021（赤）
メルロー、フレイザ、ネッビオーロなどをブレンド🍇
短いマセラシオンで仕上げた、やわらかなタンニンとジューシーな果実感。
トリンケーロの中では早くから楽しめる、軽快で親しみやすいスタイル。

自然派の名門ラ・ストッパで醸造を担ってきた、ジューリオ・アルマーニが手がけるプロジェクト。
規模の大きいラ・ストッパでは踏み込めない、リスクを取った攻めの醸造で、また違った魅力を見せてくれます。

長期マセラシオンにより、ブドウの旨みと輪郭をじっくりと抽出した2本。

🍒 Ciliegia 2022（オレンジ）
樹齢60年以上のオルトゥルーゴを使用。
ストイックで複雑、果皮由来の旨みと張りつめた緊張感が印象的。

🍎 Mansano 2021（オレンジ）
マルヴァジア主体に地場品種をブレンド。
白の枠を超えた厚みとタンニン、じわっと広がる奥行き。

同じ造り手でも、表情はまったく別。

今月から、TEOのイベントは「テーブルアンドテロワール」と題し
土地（エリア） × ワイン × 料理をテーマにしたシリーズになります。

その土地で飲まれているワインと、
その土地で食べられてきた料理を、
ひとつの「食卓」として体験してもらう夜です。

第1回目は、イタリア・トスカーナ。
肉の街とも言われるこの土地のワインに合わせて、
豚肉をテーマにした料理を中心にご用意します。

あわせて、
トスカーナらしい食べ方の前菜や、
魚介を使った料理も少しだけ。

フランス・ボジョレー地方で1980年代から有機栽培・ビオディナミを実践する、自然派の先駆者クリスチャン・デュクリュー。

野生酵母発酵、SO2無添加。
人的介入を極力抑え、ブドウの力をまっすぐに表現する造りです。

ラズベリーやプラムの瑞々しい果実味に、ほんのりスパイスを感じる奥行き。

果実は豊かでも、輪郭はくっきり。
しっかりしたタンニンがありながら、重たさはなく心地よいバランス。

新潟県新潟市を拠点に、小林ご夫妻が営む小さなワイナリー「ハッコー・ショオ」。

飲む人の心を温めるワインをという想いが込められています。

コンセプトは「1人1本飲めるワイン」。
国産ぶどう100%、できるだけ自然に、必要なときだけ手を添える造り。
植物や果実の旨みを大切にした、いわゆる“ダシ感”のある染みる味わいが魅力です。

(formerly Domaine Chaud)

Hakko Chaud is a small winery run by the Kobayashi couple in Niigata City, Japan.

“Chaud” means “hot” or “passionate” in French, and also plays on their family name “Sho.”
Their wish is to make wines that warm people’s hearts.

Their philosophy: “a wine you can drink one bottle of by yourself.”
Made with 100% Japanese grapes, minimal intervention, and great respect for the natural character of the fruit.
Their wines are known for a gentle, umami-driven “dashi-like” quality.

Grape: Kerner (Yoichi, Hokkaido)

Soft citrus and muscat aromas, clean acidity and calm umami.

宮城県川崎町のワイナリー、ファットリア・アル・フィオーレ。
SO₂無添加・自然発酵をベースに、食用ブドウも使いながら、自由で食卓に寄り添うワイン造りをしています。

今回はロゼとオレンジ、タイプの違う2本。

🌷 Rosato 2024 Bis! Ripasso
（ロゼ）
品種：ロザリオビアンコ、ネオマスカット、マスカット・ベーリーA ほか

2015年のロザートをイメージした“アンコール版”。
マスカット・ベーリーAの搾りかすを使ったリパッソ製法で、洋梨やグアバの果実味に、ほのかなスパイス感。
軽やかさとコクを両立しています。

🍊 Anco（オレンジ）
品種：デラウェア

4ヶ月間じっくり醸しています。
杏子やはちみつレモンのような香りに、きれいな酸と旨み。
キャンディ感は控えめで、和食にも合わせやすい1本。

Fattoria Al Fiore is a small winery in Kawasaki town, Miyagi, working with natural fermentation and no added SO₂, often using table grapes as well.
Their wines are gentle, creative, and made for the table.

Here are two very different styles.

🌷 Rosato 2024 Bis! Ripasso
Grapes: Rosario Bianco, Neo Muscat, Muscat Bailey A, etc.

A revival inspired by their 2015 rosato.
Made with the ripasso method using Muscat Bailey A grape skins.
Notes of pear and guava with a subtle spicy touch.
Light yet pleasantly layered.

An orange wine macerated for four months.

They combine the aromatics of white wine with a gentle tannic grip, making them both refreshing and satisfying.

熟した洋ナシやリンゴの果実味に、

エキス感はたっぷり。

フランス・アルザスの実験的ネゴシアン、サンズ・オブ・ワイン。
造り手はファリド・ヤヒミ。

有機・ビオディナミ栽培のブドウを中心に、亜硫酸無添加。
品種や産地の枠にとらわれず、「今おもしろいかどうか」で組み立てる自由な発想の造り手です。

ピノ・ブラン、リースリング、オーセロワ、ピノ・グリのブレンド。

開けたては少し還元的。
時間とともに、スモークのニュアンスとトロピカルな果実が立ち上がります。

青い柑橘や青リンゴのような爽やかさに、きれいな酸とミネラル。
軽快で、気づけばグラスが進むタイプ。

ラフさの中に、ちゃんと精度がある。
いまのアルザス自然派らしい1本です。

From Alsace, France.
Sons of Wine is an experimental négociant project led by Farid Yahimi.

Using organically and biodynamically grown grapes, with no added sulfur,
he creates wines guided by curiosity rather than strict rules of variety or origin.

A blend of Pinot Blanc, Riesling, Auxerrois, and Pinot Gris.

Slightly reductive on opening, then slowly opens up to smoky notes and tropical fruit aromas.

Fresh acidity like green citrus and green apple, with clean minerality.
Light, refreshing, and dangerously easy to drink.

Wild at heart, but precise in ex*****on.
A very “now” expression of natural Alsace.

ラ・ビアンカーラ／サッサイア（白）あります🇮🇹

イタリア・ヴェネト州ガンベッラーラよりイタリアの自然派を代表する造り手、アンジョリーノ・マウレが手がけるラ・ビアンカーラ。

「ブドウと土地がすべて」という思想のもと、添加に頼らず、畑と発酵の流れに委ねるワイン造り。
自然派ムーブメント初期から、その姿勢を貫いてきた存在です。

品種はガルガーネガ🍇

うっすら濁りのある麦わら色で、洋梨のようなみずみずしい果実に、石を思わせるミネラルとほのかな塩気。

口に含むと、すっと染み込むような酸と旨み。
軽やかなのに芯があり、気づくともう一口飲みたくなる。

「ワイン界のポカリ」と呼ばれるのも納得の、乾いた身体にしみるタイプの白です🫧

開けたてのピュアさも、数日後の深まる旨みも、どちらもぜひ。
