Last MidNite Chef event will close with the excellence of cuisine and his 3 Michelin Stars.

Giancarlo Perbellini developed a passion for cooking from an early age within his family.
A passion that kept growing and led him to gain experience in some of the most renowned Italian and French restaurants.

In 1989, he opened his restaurant Perbellini, and in 1996 he earned his first Michelin star, followed by a second star in 2002.
In 2014, he opened , and in the following years he pursued many other projects across Italy, culminating in the achievement of his third Michelin star in 2024. ✨

His cuisine goes beyond the boundaries of classical tradition, creating a personal style in constant evolution.
He defines himself as a craftsman of taste, capable of transforming technique, emotion, and creativity into unique gastronomic experiences.

Hush is a highball belonging to the “Foundamental Source” category, the very first chapter of Flux.

Crafted with tequila blanco and enhanced by the aromatic depth of Bitter, it is blended with a delicate peach Kong cordial and finished with the lively sparkle of Tassoni Ginger Ale.

The result is a fresh, fruity, and vibrant cocktail, perfect as an aperitif, yet equally suited for an after-dinner experience thanks to its sharp, lingering notes, where tequila and bitter come together in a refined and contemporary balance.

Tuesday, May 5th, Drink Kong will host .paris, a cocktail and music bar from Paris with French-Japanese influences.

Founded two years ago through the partnership between a talented mixologist and a skilled musician, it draws inspiration from the atmosphere and listening culture of Japanese jazz kissas.

From 8 PM to 11 PM, at the central bar of Drink Kong, Guillaume Castaignet will present a drink list focused on seasonal ingredients, enhanced by the use of sake from to build balance, texture, and aromatic depth.
