Partendo dalla grande varietà di prodotti della nostra regione e nel rispetto della stagionalità, vogliamo esplorare somiglianze, differenze e trasformazioni di piatti che affondano le radici nella cucina locale, nella cucina regionale italiana e in quella dei paesi del bacino del Mediterraneo. Vi invitiamo a un viaggio nella memoria e nella tradizione locale e, al tempo
stesso, alla scoperta di altri luoghi che, attraverso le loro ricette, riusciamo a sentire affini e vicini. I vini, tutti di provenienza pugliese, saranno una parte importante di questa esperienza. Il progetto sciarabà è stato accolto negli spazi dell’hotel Colle del Sole, gestito da oltre quarant’anni dalla famiglia De Carlo, e intende mostrarsi degno di questa lunga storia di ospitalità offrendo un ambiente tranquillo e accogliente a chiunque abbia voglia di regalarsi una pausa piacevole per tutti i sensi. Spazio anche all'aperto e accesso al giardino.
ʃɑːrɑːbɑː' or sciaraballo, is the Alberobello dialect word for charabanc, deriving like the English from the French char-à-bancs. Our project at sciarabà is to offer an excursion in wine and food whose destination is the whole Mediterranean. Starting out with the great range of produce from our own region and making the most of its seasonality, we will explore similarities and differences and the transformations that dishes undergo from their origins in our local cuisine, in regional Italian cooking more generally, and throughout the countries of the Mediterranean basin. You are invited to travel with us through local tradition and memory and at the same time to discover other places to which we find ourselves linked by a common heritage of gastronomic approaches. The sciarabà project is hosted by the Hotel Colle del Sole, run for over forty years by the De Carlo family, and aims to be worthy of their fine history of hospitality by offering a calm and welcoming space for anyone looking to reward themselves with an intriguing stopover to beguile the senses. We also offer outdoor service and access to the hotel's garden.
