Five years ago today, we opened the doors to our humble little Mizu in Bandra and sent out our very first order.
We didn’t know what the future looked like… just that we wanted to cook with heart, serve with honesty and build something that felt like home.

Half a decade later, we’re sitting here overwhelmed with gratitude, with memories and with all the love you’ve shown us from day one ❤️

Our very own has been awarded #14 at the Food Superstars (India’s Top 30 Chefs) Awards 2025 — and what an honour it is!

This recognition isn’t just personal; it’s a milestone for the entire Mizu Izakaya family. And we couldn’t be more proud ^.^

The road here hasn’t been without its challenges. Every failure, setback and late night in the kitchen has shaped us just as much as the wins. Teaching resilience, sharpening our craft and reminding us why we started in the first place.

When the right sake meets the right dish, subtle notes get amplified, textures find balance, and flavors linger a little longer.

Here’s some of our favourite pairings at Mizu Izakaya:

🍄‍🟫Shio Kombu Mushrooms with Messenger Rabbit — a rich, dry sake layered with aromas of oats, caramel and spice. Earthy, umami-packed mushrooms meet the warmth of spice and sweetness of caramel for a pairing that’s both grounding and indulgent.

🐟Fatty Tuna Taru Taru with Winter Cherry Junmai — a clean, elegant sake with soft floral notes and a whisper of orchard fruit. The lush richness of tuna melts seamlessly into the sake’s crisp clarity, creating a pairing that feels both refreshing and luxurious.

🍵Matcha Misu with Sho Chiku Bai Kyoto — fruity, medium-dry and aromatic with hints of French vanilla and cardamom. It’s a playful balance: the bitterness of matcha softened by a sake that’s fragrant, silky, and quietly decadent.

This is just a glimpse of how we think about food and drink at Mizu Izakaya. Not just pairings, but conversations between ingredients.

INTRODUCING: MAHUA ICE CREAM SANDO 🍨🍞
Mizu’s sweet ode to the Japanese sando and the mighty mahua flower 🌸

Crispy, nutty, and wildly aromatic, our special mahua-infused Shokupan bread gives way to lusciously sweet vanilla bean ice cream, while a glossy mitarashi-style, white shoyu & Mahua flower glaze adds the kind of sweet–salty depth you find in classic Japanese wagashi. Then comes the miso–mahua ketchup: fragrant and rich, it nudges the whole dish into a new dimension.

Mahua (Madhuca longifolia) is an indigenous blossom beloved across the Indian subcontinent. Traditionally dried, brewed, cooked, and even pressed for butter, it’s a climate-resilient tree that has nourished communities for generations. Its blossoms are naturally sweet and nutty, making them a dream ingredient for pastry and glazes.

At Mizu, we have always strived to champion ingredients from the Indian subcontinent and process them the Japanese way—precision, restraint, and deep respect for seasonality.
The Mahua Ice-cream Sando is our way of honoring a storied local ingredient through Japanese techniques as part of the 7th edition of the Wild Food Festival.

Shumai 焼売

The Mizu Izakaya Shumai is a standing ode to the treasures of the oceanic world.

With roots that can be traced back to China, the Shumai arrived in Japan through oceanic trade routes in the Yokohama port and is currently one of the most versatile and cherished dishes of modern Japanese cuisine.

Our take on this combines two elements each from the Indian and Japanese seas. With fresh prawns and crab meat sourced from the Indian Ocean and Conger Eel and Bonito sourced from the Japanese seas, the dish is served in a deeply umami kombu broth.

Plated in a unique imitation of Japan’s snow-clad pines, each bite, a little pocket of the sea — tender, briny, and gently warming. Just the kind of comfort we all crave this season!

Behind every well-run establishment, there’s always a story. Ours is one of friendship, persistence, and a shared love for good food.

What started as a dream of two friends to bring the soul of Japanese izakayas to India, turned into a journey of challenges, learnings and small wins that kept us going. Every step has been driven by the same belief – to create experiences that feel personal, honest, and full of flavour.

Fire-Grilled Scallops ホタテ

Sweet, plump Hokkaido scallops are kissed by flame over a traditional Japanese Konro grill — revered for its intense, even heat and ability to impart a delicate char without compromising the scallop’s tenderness.

As they sizzle over binchotan coals, the scallops are basted in mentaiko butter, infusing them with smoky, buttery, umami goodness. Plated on a bed of silky, savoury, and just-sweet-enough miso corn mousse, finished with a whisper of Gondhoraj lime to lift it all.

And while nothing quite beats a hot grilled corn on the cob in this rainy weather, we’d argue this comes deliciously close ^.^
