For three days, Mukesh Mills held a different kind of rhythm.
Spaces once defined by time and industry turned into tables of conversation, where food, fabric, and thought moved together. Between its walls, taste found form, and form found texture.

Across three days, a seven-course menu unfolded in dialogue with design. Plates moved like fabric, courses layered like threads, each moment shaped by the coming together of disciplines.

What remains now are fragments.
Of light, of movement, of something that existed briefly and fully.

AWAKENING // Evolution At EKAA
MUSHROOM-MUSHROOM
BLACK RICE • SHIITAKE • WOODEAR • MUSHROOM CHIPS

Visualising the anatomy of umami. This plating sequence reveals the intricate architecture behind our Mushroom-Mushroom course. Every element is placed with the intent to build a crescendo of flavours.

The glossy richness of the black rice porridge provides the stage. We build upward with the architectural shapes of wood ear and shiitake, balancing the visual weight with the lightness of pickled elements. The placement of the mushroom chips adds a necessary fragility to the silhouette.

It is finished with a cloud of mushroom dust, deepening the aromatic profile. This course is the art of turning humble ingredients into an elegant experience.

Modak /

There are flavours that do not stay on the palate. They stay in memory.
Modak is one of them: soft, warm, sweet, and shaped with intention. A dessert that carries comfort in its gentleness and familiarity in its fragrance.

In this course, that sentiment is translated into a drink.
The familiar sweetness of coconut and jaggery is refined into a layered, delicate cocktail, allowing nostalgia and craft to meet. It is served with intention, not to imitate the sweet, but to express the feeling that surrounds it.

TASTING 5.0 // THE KINGDOM OF THE MARATHAS

Lamb Sweetbread | Lion’s Mane / Kalbhat Rice / Quince / Greens / Sansav / Thoy

The Marathas established their identity as warrior kings. Known for their conquests and military prowess, the Maratha kings often ate what they foraged. Eating only for sustenance, their meals were usually cooked in a single pot and consisted of legumes & wild greens they found along the way. Foods were often pickled to help preserve them for longer.

At Ekaa, we recreate this seemingly practical meal with a porridge made of Kalbhat rice, an almost-extinct species of rice from Maharashtra that is finding its feet again. Served with an option of cured lion’s mane or lamb sweetbread, this course is accompanied by a quince pickle, roasted potato thoy, smoked tomato sansav and grilled greens.

When we researched about the culture and cuisine about the Tzars, we realised that parallels can be drawn between the opulence of the royal courts and fine dining as we know it today. Of all the kings that left an indelible mark in the pages of history, Tzar Nicolas II stood out to us for his dish of choice ‘eggs on eggs’. He was known for throwing lavish soirees, although he himself had humble tastes, except one of his favorite dishes of an egg omelette with caviar. Although our course also likes to explores the produce that is used extensively in Russian cuisine for ages.

This course on our tasting features trout roe sourced from Kashmir, a garlic-infused Smetana, beetroot cooked in terracotta, a fermented shiitake seasoning, and a Kale relish.

Mogri / Purple Yam / Matki / Chhaas Cream

A forgotten vegetable, Mogri is the hero ingredient of this Ekaa classic. Inspired by a treasured family recipe often guarded by grandmothers, this dish is reminiscent of the pickles made by the matriarchs.

Available only in the winter months, ‘mogri’ or ‘dragon tail radish’ is pickled to preserve its flavour. It is served on a bed of spiced purple yam puree. The dish is accompanied by pickled tindli and a warm salad made of sprout and ‘matki.’ It is complete with a side of ‘chhaas’ or buttermilk cream.

Tomato Sorbet / Agave Jelly / Culantro Juice

Our palate cleanser preceding the Aztec course aims to recreate the landscape and cultural symbols that shaped the central Mexican empire. /

The tomato sorbet is meticulously shaped to resemble a sunflower, an offering to the Aztec Gods. Lining the circumference of the sorbet is our agave jelly, created with Pi***la Joven. Cut into crystal-like formations, it is representative of the Giant Crystal Cave of Mexico. The course is served with a sour, green juice made using culantro, to symbolise the now drained, Texcoco Lake. //

White Bean Gyūhi (求肥) / Persimmon and Orange Marmalade / Blood Orange Jelly / Coconut Water Jelly / Matcha-Soy Milk Tea //

Wagashi is Japanese confectionery that is made with a combination of rice and red or white bean paste .
The origins of 和菓子 or ‘wagashi’ can be found over 2000 years ago. Although popularised during the Meiji period, the history of this confection is intertwined with that of Japan. Shaped by the notable interactions with China, the development of the Japanese tea ceremony, and the arrival of Western confections, wagashi is an extension of Japanese culture.

Through the years wagashi became refined in terms of taste but it still stands as a symbol of pride for its makers as it displays their craftsmanship like no other.

In the traditional tea ceremony, it is often served with matcha. The bitter, vegetal tastes of which complement the sweet bite-sized confection.
