“Chilli - it’s either blood red or a vivid green. Almost always loaded with pungency. Cut and it will sting. Taste and it will bite. But yellow chilli? I found it simply inconceivable. Till one fine day, a few years ago, I discovered it on the streets of my mother’s hometown, Meerut. I have been travelling the length and the breadth of India in search of the unique tastes and flavours of the various regions, for inspiration for many of my recipes. We all know Meerut is the melting pot of unique chaats. The special chilli mix that the chaatwallas used here adds that extra zing and brings about a confluence of flavours, aroma and colour.
