Stainless Steel tank fermentation combined with toasted oak barrel fermentation is the trademark of the flavoursome and fine tasting wines of our winery. Cumbum’s favourable local conditions provide the intense fruity flavours in grapes required for mouth watering tastes and enjoyable wines. Misty Grapes and Red Sea are undeniably unique brands and the creators of our wines believe in the Roman philosopher Petronius’s saying “Wine is Life”. The dryness and low alcohol content of a cold brew may be adept at soothing palates set ablaze by spice, but Master Sommelier and lecturer Scott Carney of Junoon in New York City wants to introduce guests to the illimitable nuances of wine and their power when paired with Indian food. With wine, he hopes “to give the food and its complexity more respect. Carney's pairings harmonize wine with the complexities of Indian spices and sauces, and complement the wide array of cooking techniques found in Indian gastronomy. He has found that, unlike beer, wines can either amplify the heat in a dish or soothe the palate suffering from too much spice.

Science just keeps getting weirder. Just when you thought you had heard it all, a new study has found that noise actually has an effect on the taste of alcohol, or at least, our perception of the taste of alcohol. Dr. Lorenzo Stafford, a psychologist from the University of Portsmouth, observed. "It appears that our primary sense of taste is somewhat immune to very distracting conditions but is indeed influenced by music alone." The study was conducted to investigate research that people drink faster when exposed to loud music. “Since humans have an innate preference for sweetness, these findings offer a plausible explanation as to why people consume more alcohol in noisy environments," Dr. Stafford said. So the next time you get sloppy drunk at a loud bar, blame it on Lady Gaga.
